SWEET BREAD OVERNITE
I love this recipe! It's easy to make and rises overnight, so I have time to do other things and still have it piping hot for the meal!

Steps:
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, beat eggs until fluffy. Stir in 4 cups of flour, salt, sugar, milk, 3/4 cup melted butter, yeast mixture and vanilla. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise overnight in the refrigerator.
- The next morning, deflate the dough and turn it out onto a floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 90 minutes. Preheat an oven to 300 degrees F (150 degrees C).
- Brush risen loaves with 2 tablespoons melted butter and bake in preheated oven for 1 hour, or until golden brown.

- Pre-heat oven to 350 degrees, line & grease a 9x5x3 loaf pan.
- Sift all flour, baking powder, salt, set aside. Cream butter and sugar until light a fluffy, Add vanilla, seeds & egg to wet and beat well.
- Alternately add dry & milk to wet beating after each addition, ending in dry. Pour into pan and bake for 1 hour or until done.
- Cool ten minutes in pan before turning out. Cool over night before cutting and serving.

- (Icing may be doubled and used for any cake or bun icing).
- Dissolve yeast in 1/4 cup warm water and set aside until foamy.
- Heat milk, shortening, sugar and salt to melt shortening.
- Cool to warm and add yeast mixture, egg yolks and whole eggs.
- Beat well by hand.
- Gradually beat in by hand 6 cups of flour and the cardamom.
- Knead well on a floured surface only adding additional flour to make a smooth and elastic dough.
- Place dough in an oiled bowl, turn to coat with oil and cover and let rise double in volume.
- Punch down and cover dough and refrigerate overnight in large bowl.
- When ready to use, punch down and knead briefly to warm up dough.
- Use dough as you wish for coffee cakes, sweet breads, buns, etc.
- You may divide dough into 6 buns, or 4 equal pieces to make 4 small loaves or braids.
- If braiding, divide each piece into 3 loose strands and braid and tuck under ends.
- Brush with melted butter.
- Place on baking sheets/pans and let rise double in volume.
- Bake in a 350F oven about 30 minutes or golden and tested done.
- Remove from pans/baking sheet to cool on rack.
- Mix icing ingredients and drizzle over warm cake/bread.
- Yield: approx.
- 6 buns, 4 small braids, or 2 large loaves.

A wonderful sticky, sugar topped sweet bread that is flavoured with orange blossom water. Fouace is a very old traditional bread, the word originally referred to the oven in which bread has been cooked since ancient times, from the Latin word "focus" or hearth. This orange blossom scented bread is traditionally shaped in to a wreath or an oval and is from the Albi region in the South of France near Toulouse. As the bread bakes slowly, it spreads out as it rises, giving a very distinctive shape. It is served very hot and, depending on the version, may be topped with white beans, rillettes, salted butter or goat's cheese; however, I prefer this recipe served hot, spread with butter and a dollop of apricot conserve. - The night before.
- Dissolve the yeast in the lukewarm milk.
- Arrange the flour in a bowl. In the centre place the whole eggs, sugar, salt, orange flower water and yeast-milk mixture.
