SWEET PICKLED MUSTARD GREENS

These are great in soups and noodle dishes. Especially Pad Thai

Sweet Pickled Mustard Greens image

Steps:

  • 1. Place the mustard greens in a bowl and sprinkle the salt over them and mix with hands. Let sit one hour.
  • 2. Heat the vinegar, sugar, and red pepper flakes until the sugar is dissolved. Let cool
  • 3. Pack the mustard greens in two quart jars. Pour the cooled vinegar mixture over. Place lid on jars and let sit in refrigerator for 3 days.

1 bunch mustard greens ribs removed
2 Tbsp salt
5 c rice vinegar
3 c sugar
1 Tbsp red pepper flakes

GREAT AUNT VERA'S SWEET MUSTARD PICKLE

My Grandmother's sister's recipe... it's at least 70 years old. I usually hate pickle but I love this one :) Excellent use for all the home grown green tomatoes that never go red. Great on crackers w/cheese, in a cold meat sandwich etc. It does make a LOT though... but you shouldn't have a problem giving it as gifts tc.. Our family and friends are always coming back for more:) This makes at least 19 LARGE jars.. so I'd recommend cutting the recipe down to 1/4 if you want to make this the first time..)

Great Aunt Vera's Sweet Mustard Pickle image

Steps:

  • Cut up vegetables, add the salt, cover with cold water and leave to stand overnight.
  • Pour off the liquid next morning, put vegetables in to big pan (or several as necessary) and cover with vinegar.
  • Add sugar and cook until soft.
  • Mix the flour, mustard, turmeric, curry and mix to a smooth paste with some cold vinegar.
  • Remove main mixture from heat and add paste in stages VERY carefully to the main mixture (too much too quick and it will become lumpy) Stir well and boil for 5 minutes.
  • Bottle in screw-top jars.
  • Refrigerated, this stuff keeps for months and months.
  • Note: This makes at least 19 large jars, so I'd highly recommend doing a 1/2 or 1/4 recipe first!

2 3/4 kg onions (4.4 lb)
1 large cauliflower
green tomato
runner beans
2 cucumbers
2 1/3 kg sugar (4.3 lb)
3 1/2 bottles of table vinegar (not Draught vinegar, 3 x 34 oz bottles)
2 tablespoons salt
1 cup flour
3 tablespoons mustard
28 1/2 g turmeric (1 oz)
2 tablespoons curry

  • Boil 2 quarts of water in your wok, and add ½ teaspoon salt. Next, add the cleaned, cut squid to the water, and stir for about 30 seconds, or until it turns a white opaque color. Transfer them out of the wok, and set aside to drain.
  • Heat your wok over medium heat, and add 2 tablespoons of vegetable oil. Add the smashed ginger to the wok, and let it fry in the oil for 10 seconds. Next, add the smashed garlic, and let it fry for another 10 seconds.
  • Add the dried whole chili peppers (if using), the white portions of the scallion, and stir-fry for 5 seconds. Make sure not to break the peppers, or the dish will be very spicy, but toasted whole chili peppers add a nice subtle flavor to this dish.
  • Add the pickled mustard greens to the wok, and stir-fry on medium high heat for 30 seconds. Add the Shaoxing wine. Continue to stir-fry for another 30 seconds, giving the mustard greens a good sear. Turn down the heat if the any of the aromatics start to burn!

  • Bring everything but the salt and mustard greens to a boil in a large pot. Turn off the heat and let it cool to room temperature. Pour everything into a vessel that you can weigh, and weigh the water plus spices in grams. Write this down.
  • Wash you mustard greens well, then shake them dry and weigh them in grams. Write this down.
  • When it's cool, weigh out 2 percent of the total weight of greens + water + spices in salt. Dissolve this in the liquid. If you use fine-grained salt you should have no problem. If the salt doesn't want to dissolve, stir until it does.
  • NOTE: If you don't want to weigh all this out, just use the salt ratio I have in the ingredients list. It is approximately the same, but not exactly.
