SWEET KIELBASA
My family makes this recipe all the time. It is so delicious. I recommend trying it with the pork kielbasa first because that's how we have always made it. I like to use turkey kielbasa now though because it is a bit healthier.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place the sliced kielbasa into a 9x13 inch baking dish. In a medium bowl, stir together the cranberry sauce and pineapple chunks. Pour over the kielbasa and stir to coat.
- Bake for about 1 hour in the preheated oven or until sauce thickens.

- Place pineapple, kielbasa sausage, and onions into the bottom of a slow cooker.
- Combine water and cornstarch in a bowl and whisk until smooth.
- Whisk together reserved pineapple juice, rice vinegar, brown sugar, ketchup, and soy sauce in a saucepan. Bring mixture to a simmer; pour in cornstarch slurry. Whisk until well combined and thickened slightly, 3 to 5 minutes. Remove from heat and pour over the ingredients in the slow cooker. Mix well to coat.
- Cover and cook on High until kielbasa is cooked through, and mixture has thickened and reduced, 3 to 4 hours.

Kielbasa & pineapple make a great combination in the simple, but very tasty dish. I got the recipe from my boss about 12 years ago and have used it many times since. Serve hot as an appetizer or as the entree for a light dinner with a salad.

- Drain pineapple, reserve juice (*for a substitute to the chicken broth, you can use 1 cup juice/water with 1 bouillon cube and omit the salt); set aside.
- Slice sausage into 1/2 inch thick slices; set aside.
- In a 9x13 baking dish, blend cornstarch, soy sauce, vinegar, sugar, salt & broth with a whisk until smooth.
- Add meat and pineapple chunks. Mix well.
- Bake, uncovered, at 350 degrees for 45-50 minutes, until hot, bubbly, and sauce has thickened.

SWEET ONION KIELBASA
This is a very simple recipe I clipped from the newspaper. I make this with turkey kielbasa to lower the fat content and usually use Newcastle or Sam Adams as the beer. The recipe is intended as an appetizer but I see no reason why you couldn't serve it as a main dish with a side of rice and a veggie.

- Slice kielbasa into 1/2-inch pieces.
- In a large skillet, bring 1/2 can of beer to a slow boil and add kielbasa.
- Cook until the beer is reduced by half, then add the remaining 6 ounces of beer.
- Add honey and mustard, and spices to taste.
- Let simmer for 5 minutes or until sauce reaches a thick, honey-like consistency.
- Saute onion in butter until onions are transparent.
- Onions may be mixed into the finished sauce, or added as a garnish.

- In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add sausage slices, and cook until brown.
- Remove sausage slices from skillet, and drain grease. Add remaining olive oil and butter to the skillet and heat over medium-low.
- Spread sliced onions evenly over the bottom of the skillet. Stir onions to coat them with the oil and butter mixture.
- Cook onions for about 20 minutes or until soft and brown. If onions seem to be cooking too quickly, lower heat to prevent them from burning.
- Return sausage slices to the skillet, and stir together with the onions. Season with salt and pepper.
- Cook until sausage is warmed through. Serve immediately, and enjoy!
SWEET & SOUR KIELBASA
Steps:
- Slice kielbasa, less than 1/2 inch thick. Boil in juice of the canned pineapple for around 15 minutes. Remove and place in deep baking dish 12x12x2 is good. Do not drain, add pineapple, sugar and ketchup, mix well.
- Put in 350°F oven uncovered for 1 hour. Stir occasionally, remove when done.
- Add the cherries. Mix cornstarch with a little water and add that also; stir well. Put back in oven for 10 minutes. Enjoy!!
