Steps:
- Preheat oven to 350°F. Roast potatoes on rimmed baking sheet until tender, 1 to 1 1/2 hours. Cool slightly. Scoop flesh into large bowl; discard skins. Mash hot potatoes until coarse puree forms.
- Heat cream and butter in heavy small saucepan over low heat until butter melts, stirring occasionally. Gradually stir hot cream mixture into hot potatoes. Stir in syrup, bourbon, and all spices. Season with salt and pepper. DO AHEAD: Can be prepared 1 day ahead. Cover and chill. Rewarm in microwave. Sprinkle nuts over and serve.
SWEET POTATO HUMMUS
I wanted something easy and fitting for an autumn gathering. I found this recipe and altered it to make it even easier to make. It is a nice combination of naturally sweet and typically savory. Serve with pita wedges, crackers, or cut veggies.

- Preheat oven to 400 degrees F (200 degrees C).
- Poke holes all over sweet potatoes with a fork.
- Roast sweet potatoes in the preheated oven until soft, about 45 minutes; let cool. Cut sweet potatoes in half lengthwise.
- Combine garbanzo beans and olive oil in a blender and pulse several times to mash. Scoop flesh out of sweet potato peels and add to the blender; pulse to combine. Add tahini, lemon juice, lemon zest, cumin, coriander, white pepper, and sea salt to mixture; blend until smooth, adding reserved garbanzo bean liquid as needed to make a smooth, creamy hummus.

SWEET POTATOES WITH BOURBON AND MAPLE

- Stir coffee, maple syrup, sugar, and espresso powder in a medium saucepan over medium-high heat until sugar dissolves. Bring mixture to a boil; cook until thickened and reduced by half, 6-7 minutes.
- Remove syrup from heat; add bourbon and 2 tablespoons butter. Reduce heat to medium and simmer until sauce is reduced to about 3/4 cup, 40-45 minutes (mixture should be thick enough to coat a spoon, but not sticky, and will thicken as it cools). Season sauce to taste with salt and pepper. DO AHEAD: Sauce can be made 2 days ahead. Cover; chill. Rewarm before serving.
- Arrange racks in upper and lower thirds of oven; preheat to 425°F.1 Melt remaining 7 tablespoons butter in a small saucepan; pour into a large bowl. Add sweet potatoes and oil and season with salt and pepper. Divide potato mixture between 2 large rimmed baking sheets and roast, turning potatoes often and rotating sheets halfway through, until potatoes are tender and start to turn golden brown and crisp around the edges, 30-35 minutes. DO AHEAD: Potatoes can be roasted 4 hours ahead. Let stand at room temperature. Rewarm before continuing.
- Transfer potatoes to a serving platter. Drizzle some warm sauce over and sprinkle with almonds; serve remaining sauce alongside for those who want more.
SWEET POTATOES WITH BOURBON AND BROWN SUGAR
These silky mashed sweet potatoes are spiced with cloves, nutmeg and a little black pepper, brightened with lemon zest, and spiked with bourbon (or orange juice, if you'd prefer). Puréeing them in a food processor yields the smoothest, airiest texture, but for something a little more rustic, you could mash them by hand. Whichever you choose, these reheat well, either in a microwave or in a pot over low heat.

- These potatoes can be steamed to preserve more of the flavor and vitamins (or boiled if you wish), until tender. (To steam them, you can place them in a single layer on a rack placed over a large shallow pan of water with a large pot lid to cover. Replenish water in pan if it boils off before they are tender.)

- Preheat the oven to 350°. On a rimmed baking sheet, spread the sweet potato cubes in an even layer and season with salt. Roast until almost tender, about 30 minutes. Let the sweet potato cool.
- Meanwhile, in an ovenproof skillet, bake the cinnamon sticks until fragrant, about 10 minutes. Crush the cinnamon sticks, transfer to a blender and blend until a fine powder forms. Sift the cinnamon powder through a fine sieve into a small bowl, then stir in the granulated sugar and 1 teaspoon of salt. In another small bowl, stir the brown sugar with 11/2 tablespoons of salt.
- In a medium, heavy saucepan, heat 2 inches of oil until it reaches 375° on a candy thermometer. Line a baking sheet with paper towels. In a small bowl, whisk 1/2 cup plus 2 tablespoons of the flour with the baking powder and cornstarch. Transfer 1⁄2 cup of the dry ingredients to a medium bowl, then whisk in the seltzer just until smooth. (Discard the rest of the dry ingredients.) Place the remaining 1/2 cup of flour in a small bowl.
- Working in batches, toss the sweet potato cubes in the flour and tap off the excess. Using a fork, dip the cubes in the tempura batter, allowing the excess to drip back into the bowl. Add the battered sweet potato cubes to the hot oil and fry until golden, about 3 minutes per batch. Drain on the paper towels. Serve the sweet potato tempura with the two sugars for dipping and shots of bourbon on the side.
