QUICK APPLE AND SWEET POTATO SOUP

- In a large pot over medium heat add the butter and olive oil. Add the celery, onion, and thyme. Season with salt and pepper, then stir while cooking until the onions and celery are tender. Add the garlic, cinnamon, allspice, and cumin. Stir and cook until fragrant, about 5 minutes. Add the sweet potatoes and apples stirring to coat them with the contents of the pot. Add the vegetable stock and apple cider and then cover. Simmer for 20 to 25 minutes or until tender.
- In batches, carefully puree the contents of the pot in a blender or use an immersion blender. Taste and season with salt. Serve warm or chilled.
- When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
APPLESAUCE-SWEET POTATO BAKE
Applesauce and nut topping provide a simple addition to this easy sweet potato casserole - perfect side for any meal.

- Place sweet potatoes in 3-quart saucepan; add enough water (salted if desired) to cover. Heat to boiling; reduce heat. Cover and simmer 30 to 35 minutes or until tender; drain. Remove skins; cut each sweet potato lengthwise in half.
- Heat oven to 375°. Place sweet potatoes, cut sides up, in ungreased 2-quart casserole or square baking dish, 8x8x2 inches. Spread applesauce over sweet potatoes. Mix brown sugar, nuts and cinnamon; sprinkle over applesauce. Dot with butter. Cover and bake about 30 minutes or until hot.

CLASSIC CANDIED SWEET POTATOES
This is the classic sweet potato recipe that my grandmother serves each year for Thanksgiving and Christmas. It's very simple, yet each time I make it people rave and ask for the recipe. Embarrassingly simple & quite delicious!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place whole sweet potatoes in a steamer over a couple of inches of boiling water, and cover. Cook until tender, about 30 minutes. Drain and cool.
- Peel, and slice sweet potatoes lengthwise into 1/2 inch slices. Place in a 9x13 inch baking dish.
- In a small saucepan over medium heat, melt butter, brown sugar, water and salt. When the sauce is bubbly and sugar is dissolved, pour over potatoes.
- Bake in preheated oven for 1 hour, occasionally basting the sweet potatoes with the brown sugar sauce.

SWEET POTATO AND CHICKPEA NUGGETS RECIPE BY TASTY

- In a small bowl, combine water and flax meal, and let it sit for 10 minutes.
- In a large saucepan bring 6 cups (1 ½ L) of water to a boil, then add sweet potatoes. Cook until they are tender, about 10 minutes, then drain.
- In a food processor, combine the sweet potatoes, chickpeas, basil, flax egg, garlic, salt, pepper, onion powder, and flour, and pulse until combined. Add the bread crumbs and mix.
- Preheat oven to 400ºF (200ºC). Line a baking sheet with parchment paper.
- Take about 1 tablespoon worth of mixture and form it into a nugget with your hands.
- Bake for 20 minutes, flipping halfway, until golden brown.
- Or, pan fry with a small drizzle of oil over medium-high heat until both sides are golden brown, about 10 minutes.
- Allow to cool 5 minutes.
- Enjoy!

- Preheat oven to 350°F with rack in middle.
- Bake sweet potatoes in a shallow baking pan until very soft, about 1 1/2 hours.
- Meanwhile, soak dried chestnuts (if using) in boiling-hot water 1 hour, then drain. Coarsely chop chestnuts (cooked or dried).
- While dried chestnuts soak, bring dried apple and juice to a simmer in a small saucepan, then turn off heat. Let steep, covered, 30 minutes. Drain off and discard apple juice.
- Cool baked potatoes to warm, then peel and mash with a potato masher. Transfer 2 cups mashed sweet potato to a bowl and reserve any remainder for another use.
- Increase oven temperature to 375°F.
- Whisk butter and sugars into warm sweet potato along with honey, nutmeg, cinnamon, and 1/2 teaspoon salt until smooth. Whisk in eggs, vanilla, cream, and milk, then dates, chestnuts, and apple. Bake in a buttered 1 1/2- to 2-quart baking dish (1 1/2 to 2 inches deep) until just set, 40 to 50 minutes (center will continue to set as it cools).
- Cool to warm on a rack, about 20 minutes.
