TAMARIND SWEET POTATOES (CROCK POT)

Steps:
- Place all ingredients in a crock pot insert. Cover and cook on high for 4-5 hours or until potatoes are tender.
- Discard lemongrass.
- Season with salt and pepper if needed.
- Transfer potatoes to a warm serving bowl or platter and keep warm.
- Pour the cooking liquid int a sauce pan and reduce by half over high heat (it will be syrupy).
- Pour the syrup over the potatoes and serve.
SLOW COOKER SWEET POTATOES

- Toss the sweet potatoes with the cornstarch in a bowl to coat well. Add the mixture to a slow cooker and dot with the butter. Sprinkle over the brown sugar, pumpkin pie spice and cayenne. Pour in the vanilla, orange juice and 1/4 cup water. Season with salt. Place the lid on the slow cooker and cook on low, stirring once or twice, until the potatoes are tender, about 3 hours.
- Toss the potatoes once more and transfer to a serving dish. Sprinkle with the walnuts and parsley and serve.
CROCK POT MALAYSIAN SWEET POTATOES
Has a fruity but nicely Asian sauce that is poured over the potatoes when they get done. Not your everyday stuff.

- Cover and cook on high for 4 1/2-5 hours or until potatoes are nice and tender.
- Remove lemongrass pieces and discard.

- Remove potatoes and keep warm; pour liquid from crock pot into a saute pan and reduce until it gets thick and syrupy, then pour over potatoes; serve.

- Layer sweet potatoes and turkey in 4- to 5-quart slow cooker. Mix remaining ingredients except beans until smooth. Pour over turkey.
- Cover and cook on high heat setting 1 hour. Reduce heat to low heat setting. Cook 5 hours. Stir in beans. Cover and cook 1 to 2 hours or until juice of turkey is no longer pink when centers of thickest pieces are cut.
- Remove turkey and vegetables from slow cooker with slotted spoon. Stir sauce. Serve sauce with turkey and vegetables. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

- Spray 5- to 6-quart slow cooker with cooking spray. Place turkey in cooker. Arrange sweet potatoes and onions around turkey. Mix remaining ingredients except cornstarch and water in small bowl; pour over turkey and vegetables.

- Place cubed sweet potatoes in the slow cooker. Add butter and water.

- Rinse your sweet potatoes and shake off any excess water (no need to dry them; the moisture will help them steam).
