Tausi Giniling (Minced Pork in Bean Paste) image

Steps:

  • Saute ginger in oil till fragrant.
  • Add in the garlic, stir fry.
  • Dump in ground pork and stir vigorously.
  • When meat is no longer pink, add in the black bean garlic sauce and soy sauce.
  • Let mixture simmer in low heat, covered, 10 minutes.
  • Pour in hot water.
  • Simmer another 10 minutes to let flavors blend.
  • Dump in leeks last 2 minutes of cooking.

1 -2 tablespoon black bean garlic sauce (lee kum kee)
1 tablespoon Kikkoman soy sauce
1 bunch leek, slivered to strips
1/2 cup hot water

Taiwanese Braised Minced Pork image

Steps:

  • 1. Add the oil to a large Wok or skillet. Add the ginger, garlic, shallots and mushrooms. Cook until softened and the mushrooms have given up their liquid. Add the ground pork and star anise.
  • 2. Cook until the pork is done. Add the shaoxing wine, rock sugar, mushroom soy sauce, dark soy sauce, oyster sauce, and white pepper. Add the water and bring to a boil.
  • 3. Simmer 20 minutes until most of the water is absorbed. Stir in the mustard stems and green onions. Remove the star anise Serve over rice noodles.

1 Tbsp peanut oil
4 clove garlic minced
1 inch piece ginger grated
8 oz shiitake mushrooms sliced
1 medium shallot chopped
1 lb ground pork
2 star anise
3 Tbsp shaoxing wine
1/2 oz rock sugar or 2 tbsp brown sugar
2 Tbsp mushroom soy sauce
1 Tbsp dark soy sauce
1 Tbsp oyster sauce
1 tsp white pepper
2 c water
1/2 c preserved mustard stems
1/4 c green onions chopped
rice noodles cooked according to packge directions

This is minced pork cooked with mushrooms and spring onions. It is great over rice or noodles, and it can be easily freezed to be reheated quickly later. I use rehydrated shiitake mushrooms which have been squeezed dry and minced, because I prefer the flavor. This recipe is from Kimiko Barber's "The Japanese Kitchen."

  • Heat the oil in a wok or large frying pan over high heat.

Minced Pork With Thai Basil Bangkok Style [pat Krapao Moo Sap] image

Steps:

  • In a hot pan, add the oil and stir fry garlic and chili until fragrant.
  • Add pork and continue to stir fry on medium heat until almost ready.
  • Keep stir frying and add pork stock as needed.
  • Add oyster sauce, fish sauce, sugar.
  • Increase heat to high and add fresh thai basil. Keep stir frying for few seconds.
  • Serve with white basmati rice and fried eggs.
