TEN VARIETY FRIED NOODLES (CHOW MEIN)

I have adapted this recipe from "the Encyclopedia of Asian cooking" by Madame Grace Zia Chu. This is a very good Chow Mein Hope you folks enjoy it

Ten Variety Fried Noodles (Chow Mein) image

Steps:

  • Put Pork or chicken in a bowl with the soy sauce, sugar and corn starch.
  • Mix well and leave to marinate for 20 minutes or so.
  • Cook the noodles until tender (for fresh about 5 min) drain and rinse under cold running water then rinse again.
  • Beat the eggs lightly but well mixed.
  • Heat a little oil in a skillet.
  • Add eggs and cook to make a thin omelet, remove from pan and cut into thin strips.
  • Heat a little oil in the pan add pork (chicken) and stir fry until cooked, remove from pan.
  • Heat the last of the oil and add scallions, then the bamboo shoots, green veggie and a touch of salt.
  • Add pork (chicken) to the pan with the egg strips.
  • Mix ingredient thoroughly.
  • Add a little water (if necessary) to moisten.
  • Stir in the noodles and heat until hot MMMmmm.

3/4 cup shredded pork loin (or 3/4 cup shredded chicken)
1 tablespoon soy sauce
1 teaspoon sugar
2 teaspoons cornstarch
3/4 lb egg noodles (the fresh ones are best)
2 eggs
salt
1/4 cup lite olive oil
4 scallions, chopped
1 cup chopped bamboo shoot
1 1/2 cups shredded Chinese cabbage (or other green vegetable leaf, or try Sui Cho) or 1 1/2 cups shredded spinach (or other green vegetable leaf, or try Sui Cho)

CHINESE FRIED NOODLES

This is a quick, easy, and delicious recipe that all will enjoy. Try adding cooked, cubed pork or chicken, bean sprouts, water chestnuts, sliced almonds, or any of your favorite vegetables for versatility.

Chinese Fried Noodles image

Steps:

  • Boil ramen noodles for 3 minutes, or until softened, without flavor packets. Reserve flavor packets. Drain noodles, and set aside.
  • Heat 1 tablespoon oil in a small skillet. Scramble eggs in a bowl. Cook and stir in hot oil until firm. Set aside.
  • In a separate skillet, heat 1 teaspoon of oil over medium heat. Cook and stir green onions in oil for 2 to 3 minutes, or until softened. Transfer to a separate dish, and set aside. Heat another teaspoon of cooking oil in the same skillet. Cook and stir the the carrots, peas, and bell peppers separately in the same manner, setting each aside when done.
  • Combine 2 tablespoons sesame oil with 1 tablespoon of vegetable oil in a separate skillet or wok. Fry noodles in oil for 3 to 5 minutes over medium heat, turning regularly. Sprinkle soy sauce, sesame oil, and desired amount of reserved ramen seasoning packets over noodles, and toss to coat. Add vegetables, and continue cooking, turning frequently, for another 5 minutes.

  • Heat your oil to 400 degrees in a deep medium pot. Break up the noodles with your fingers and drop them in the oil a handful at a time. Use a pair of heatproof chopsticks or a long fork to break up the noodles and prevent them from sticking together. Fry until golden brown. You may need to flip/move the noodles so they brown evenly. Drain on a paper towel and let cool. Repeat until all noodles are done and set aside.
  • In a medium bowl, marinate the chicken with the soy sauce, sesame oil, and cornstarch. Set aside while you prepare the other ingredients.
  • When you're ready to cook, place a wok over high heat. Add a tablespoon of oil and sear the chicken. Remove from the wok and set aside. Add the onions and garlic to the wok and stir-fry for 30 seconds. Then add the celery and mushrooms. Stir-fry for another minute.
  • Add the bamboo shoots, water chestnuts (if using), napa cabbage, and bok choy. After stir-frying for about 30 seconds, add the seared chicken, chicken stock, salt, sugar, pepper, and bean sprouts. Stir-fry until the mixture comes to a boil.
