TACO SOUP
This thick and hearty "taco in a bowl" soup is always a favorite wintertime meal in our house. Everyone just loves it.

- In a large pot brown hamburger; drain fat. Add onion to meat and saute till tender. Add taco and ranch seasonings to meat and onions. Pour all cans in their juices and broth into pot. Bring to a boil. Lower heat to low. Cover and simmer for 1 hour. Serve in bowls and top with grated cheddar or pepper jack cheese, sour cream, tortilla chips and chopped fresh cilantro.

Steps:
- In LARGE dutch oven, brown ground beef and onion. Drain fat if needed.
- Add all remaining ingredients (except toppings) and bring to a boil.
- Reduce heat and simmer for at least 30 minutes. Serve, topped with shredded cheddar cheese and tortilla chips, or tortillas on the side.
TERESA'S TACO CASSEROLE
This can be made using ground turkey, low fat sour cream and low fat cheeses to cut down on calories, or you can use ground beef, regular sour cream and regular cheese-I've made it both ways and couldn't taste the difference-I like it both ways! Great for pot luck!

- Preheat oven to 350 degrees.
- Heat oil in skillet.
- Cook onion in oil until softened.
- Add garlic and turkey; cook until browned.
- Add tomatoes, taco seasoning, chilis (with juice) and olives.
- Simmer for 10 minutes.
- Spray 9x13 baking dish with nonstick cooking spray (or grease with crisco, your choice) Layer 1/2 of the doritos on bottom of dish.
- Add meat mixture, then sour cream, and top with Mozzarella.
- Cover with another layer of Doritos.
- Bake for 25 minutes.
- Sprinkle with cheddar cheese; return to oven for 5 minutes, or until cheese has melted.

EASY TACO SOUP
This easy taco soup is a quick meal alternative to Taco Tuesdays or a last-minute potluck invite. Serve with desired taco toppings such as shredded cheese, sour cream, lime wedges, and Fritos® corn chips. The soup freezes and reheats very well. After adding the tomato juice, cool and freeze. Continue on with the recipe once your soup has thawed and been brought to a simmer.

- Heat a heavy-bottomed soup pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Add onion and garlic. Cook over medium to medium-high heat, stirring often, until onions begin to soften, about 5 minutes. Add taco seasoning; cook and stir until fragrant, 1 to 2 minutes. Stir in black beans, corn, and diced tomatoes. Stir in tomato juice and scrape any browned bits of food off the bottom of the pan with a wooden spoon.
- Bring to a simmer; add cilantro and squeeze juice from lime halves into the pot. Simmer until flavors have melded, 15 to 20 minutes. Season with salt and pepper.

A very rich soup to serve on a very cold night! I love this recipe passed to me by my good friend Tasha! I make this one when I have a lot of people to feed. You can let people fix it how they want to, chips or no chips. I like to add sour cream sometimes on top.

- Heat a large pot over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- Add the ranch beans, pinto beans, corn, tomatoes with green chiles, processed cheese food, half-and-half cream, heavy cream, taco seasoning, and ranch dressing mix. Bring to a boil, stirring occasionally.
- Reduce heat to medium-low, and continue to simmer until cheese food is melted, about 20 minutes.
