THE SIDECAR
True fact: very few classic cocktails came out of the Prohibition era, but this is one of them. NYC mixologist Karl Franz Williams goes traditional with cognac, orange liqueur, and fresh lemon juice. Then he serves it in a glass with half a sugared rim, so you can have the option of drinking it with or without extra sweetness.

Steps:
- Fill a coupe glass with ice cubes, to chill. Place sugar on a plate. Cut a slit into the center of a lemon wedge (one per cocktail). Set aside.
- Add lemon juice, Cointreau, and cognac to cocktail shaker. Set aside. Discard the ice cubes in coupe glass. Run the lemon wedge around half of the glass rim, then gently roll the rim into sugar; the sugar should stick only to the lemon juice on the rim. Set glass aside.
- Assembly: Fill cocktail shaker with ice. Cover and shake briefly, about 5 seconds. Strain contents into chilled coupe glass (optional: for an extra smooth cocktail, double strain through a fine-mesh strainer). Garnish with a lemon wedge perched on the rim of the glass. Serve.
SIDECAR
Steps:
- Five minutes prior to serving, fill 4 champagne coupe glasses with ice. When ready to serve, dump the ice and rub the rims of each coupe with lemon juice. Rim half of each glass in the pink sugar. In a cocktail shaker add the cognac, superfine sugar, orange liqueur and lemon juice.
- Add 1/2 cup crushed ice. Cover and shake vigorously. Use the strainer and pour equal amounts into the coupes. Garnish with the lemon peels.
SIDECAR
I always think of the sidecar as a brandy margarita, except that it is made with fresh lemon juice.

THE SIDECAR COCKTAIL
The Sidecar is a velvety smooth, cognac-fueled elixir that features both sweet and sour notes. Every time I have one, I wonder why I don't drink it more often. In fact, it may be my "desert island cocktail" - the drink I'd choose if I could have only one. As is the case with many cocktails, the origins of the Sidecar are somewhat mysterious. Legend says the drink was invented in Paris during the 1920s. Some claim it was formulated in a small bistro. Others say Harry's New York Bar. Still others say it originated at the bar of the Ritz Hotel. Reportedly, the inventor of the cocktail was an American Army officer - and the drink was named after the motorcycle sidecar he rode in during quaffing expeditions. But once you taste this fabulous drink, you won't care where or how it originated.

- If you want to garnish the glass rim with sugar, wet the outside of the rim with lemon juice. Dip the outside of the rim in sugar, and swirl glass to coat.
- For the drink, combine lemon juice, Cointreau, and cognac in a cocktail shaker that is half filled with ice. Shake well for 20 - 30 seconds.
- Strain mixture into the cocktail glass. If you don't sugar the rim, you could garnish with a lemon twist or orange slice.

- Put a coupe glass in the fridge to chill. Put the cold tea, lemon juice and marmalade in a cocktail shaker and stir to break down the marmalade so it starts to dissolve. Stir in the honey then add the ice.
- Shake well, until the outside of the shaker feels cold, then double strain into the chilled glass. Serve as it is or garnish with a slice of dried orange, if you like.
