ALMOND CRUSTED TILAPIA FOR TWO

What a quick and easy dinner for two. The almond crust fries perfectly and has a slightly nutty flavor. We love the savoriness of the Parmesan cheese. It's delicious on the tender, delicate tilapia.

Almond Crusted Tilapia for Two image

Steps:

  • 1. In a shallow dish beat egg and add spices, then set aside.
  • 2. In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.
  • 3. Lightly dust each fillet with flour on both sides.
  • 4. Melt butter in a non-stick skillet over medium-high heat.
  • 5. Dip floured fillets into egg mixture.
  • 6. Then dip into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.
  • 7. When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side).
  • 8. Serve with lemon wedge garnish.

2 tilapia fillets
1 egg
1/4 tsp garlic powder
1/4 tsp lemon pepper
1/4 tsp parsley flakes
1 Tbsp flour
1/4 c grated Parmesan cheese
1/4 c almonds, finely chopped
1-1/2 Tbsp butter
2 lemon wedges

I made this with concerns of getting more Calcium into my diet. Almonds have 80 mg per 1 ounce. The almonds toasted up so nice giving this dish great flavor.

Tilapia Crusted With Almonds image

Steps:

  • Season tilapia with salt, pepper and old bay.
  • Dust with flour then dip into egg.
  • Press almond slices into the fish.
  • Heat butter and oil in an oven proof pan.
  • Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.
  • Remove gently to a platter squeeze remaining lemon.
  • Garnish with scallions and serve.

  • Preheat oven to 400°. Whisk together egg and hot sauce in a shallow bowl. In a separate shallow bowl, toss almonds, bread crumbs, lemon zest and seasonings., Halve fillets lengthwise; sprinkle with salt and pepper. Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiling pan with aluminum foil or spray with olive oil cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.
  • Mix Parmesan cheese, garlic, buttery spread, almonds, mayonnaise, bread crumbs, lemon juice, seafood seasoning, basil, black pepper, onion powder, and celery salt together in a bowl.
  • Arrange tilapia fillets in a single layer on the prepared pan; cover pan with aluminum foil.
  • Broil in the preheated oven for 2 to 3 minutes. Flip fillets, cover pan with aluminum foil, and broil for 2 to 3 more minutes. Remove aluminum foil and cover fillets with Parmesan cheese mixture.   • For the keto couscous. Cut the zucchini into small cubes along with the green peppers and cauliflower. The goal is to make the look and feel of the veggies seem like large Israeli couscous. Pre-heat a large non-stick pan over medium-high heat along with 1 tablespoon of oil. Add the veggies to the pan along with the garlic and onion powder, ½ teaspoon of salt, and a few cracks of pepper. Cook for 5-7 minutes until the veggies have softened, but are not mushy. Turn the heat off the pan, save the lemon zest for the fish, and add the juice of half a lemon along with the sliced chiles. Mix well and check for seasoning.
  • For the tilapia, add the almond flour to a small dish along with the onion and garlic powder, grated cheese, lemon zest, ½ teaspoon salt, and a few cracks of pepper, mix well. Rub some oil all over the tilapia and season with a generous pinch of salt. Place the tilapia in the seasoned almond flour and really pack on the flour, shake off excess and move to a wire rack, repeat with the second piece of fish.
  • Add enough oil to a shallow non-stick pan set over medium-high heat and allow it to come to 350 F. Fry the fish for 3 minutes on each side, or until golden brown, flip and repeat. Move to a wire rack to cool. Serve the fish with the veggie couscous and enjoy!
