EASY TIRAMISU

Both make-ahead and no-bake, this Italian treat will lift everyone's mood-including the chef's! Grab an Americano at a coffee shop to infuse the store-bought ladyfingers with freshly brewed flavor. Then, after layering the newly caffeinated cookies with marsala-spiked mascarpone, pop it in the fridge for an overnight chill that will set you up for slicing success. All that is left is a final dusting of cocoa powder before serving and you'll be all set to end the evening on a high note.

Easy Tiramisu image

Steps:

  • Pour coffee into a pie dish. Combine eggs, sugar, and Marsala in a large metal bowl set on top of (but not in) a pot of simmering water. Beat with a hand mixer or whisk until mixture doubles in volume and reaches 160°F on a thermometer, 7 to 10 minutes.
  • Remove bowl from heat and let cool slightly. Meanwhile, in another bowl, whisk cream to form peaks. Gently whisk mascarpone into egg mixture, then fold in whipped cream.
  • Working one at a time, dip half of ladyfingers in coffee, about 1 second per side, and arrange in the bottom of a 9-by-9-inch baking dish; fit them snugly side by side to line dish. Evenly spread half of mascarpone mixture over ladyfingers. Dip remaining half of ladyfingers in coffee and repeat layering with cookies and mascarpone mixture.
  • Sift a layer of cocoa over top so it infuses cream. Wrap dish with plastic and refrigerate at least 9 hours and up to 1 day. To serve, sift another layer of cocoa over top and cut into squares.

Tiramisu: Lift Me Up image

Steps:

  • Beat egg yolks and sugar in 2 quart sauce pan, beat in milk until sugar is dissolved.
  • Heat to a boil over low to medium heat, stirring constantly.
  • reduce heat and boil for one minute.
  • Cover and refrigerate until cold.
  • Mix egg milk mixture with cheese and grated chocolate, set aside. (refrigerate)
  • Beat whipping cream and 2 tablespoons of cocoa in chilled bowl until stiff, refrigerate.
  • Mix coffee with rum, or brandy and coffee liqueur, (optional)
  • Dip half savoiardi in coffee mixture, ( do not soak)
  • arrange in single layer in ungreased rectangular baking dish (11 X 7 X 1.1/2'')
  • Spread half cheese mixture over savoiardi.
  • Spread half of the whipped cream over the cheese mixture.
  • Repeat with remaining savoiardi, cheese mixture and whipped cream mixture.
  • Sprinkle with cocoa and or grated chocolate.
  • P S You can add vanilla extract when beating eggs and sugar. (optional).

Steps:

  • Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes, stirring constantly. Remove from heat and whip yolks until thick and lemon colored.
  • Add mascarpone to whipped yolks. Beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture and set aside.
  • Split the lady fingers in half, and line the bottom and sides of a large glass bowl. Brush with coffee liqueur. Spoon half of the cream filling over the lady fingers. Repeat ladyfingers, coffee liqueur and filling layers. Garnish with cocoa and chocolate curls. Refrigerate several hours or overnight.
  • To make the chocolate curls, use a vegetable peeler and run it down the edge of the chocolate bar.

  • Stir mascarpone cheese; let stand at room temperature 30 minutes. Whisk yolks, 1/2 cup sugar, 1/3 cup Marsala and salt in top of a double boiler until mixture is thickened (ribbon stage) and a thermometer reads 160°. Steps:

  • Separate eggs, placing yolks in a large-sized bowl and whites in a medium-sized bowl.
  • Beat egg whites until stiff peaks form; set aside.
  • Beat egg yolks and sugar together until creamy and golden yellow.
  • Add mascarpone and whip until fully incorporated.
  • Fold in beaten egg whites, and set mixture aside.
  • Get out your 13 x 9 glass dish (or serving dish of your choice).
  • Pour coffee and amaretto into another dish to dunk the cookies.
  • VERY, VERY QUICKLY dunk enough cookies (one at a time) to line the bottom of the serving dish.
  • The cookies absorb liquids very rapidly so you don't want to keep them in the hot coffee - just dip them in and take out immediately.
  • Once the bottom of the serving dish is covered, spread 1/2 of the mascarpone mixture over the cookies.
  • Repeat the cookie step, then spread on the remaining mascarpone mixture.
  • Refrigerate for several hours to allow everything to set and to let the flavours develop.
  • Dust with cocoa. (If it will be in the fridge overnight, you may wish to save the cocoa dusting until the next day.)
  • Ideally, the tiramisu should be made the day before you wish to serve it, and it lasts several days if kept refrigerated.
