STIR-FRIED TOFU AND PEPPERS
This attractive stir-fry is inspired by a traditional Chinese dish called rainbow beef. The vegetarian version works well, and it's also easier to make. If you prefer a very firm tofu, take the extra time to weight it as directed in step 1. I am happy to skip this step and use firm tofu that hasn't been weighted.

Steps:
- Optional step for firmer tofu: Blot the tofu dry, wrap in a clean kitchen towel and place a cutting board on top. Let sit for about 15 minutes. Whether weighted or not, slice the tofu about 1/2 inch thick into 1- x 2-inch dominoes.
- Mix together 1 tablespoon of the soy sauce, 1 teaspoon of the brown sugar and 1 tablespoon of the oil in a medium bowl. Toss with the tofu, and stir to make sure all of the pieces are coated. Let sit for five to 10 minutes while you prepare the other ingredients.
- In a small bowl, stir together the remaining soy sauce and sugar, hoisin sauce and sesame oil. Set aside.
- Heat a large nonstick skillet or wok over high heat until a drop of water evaporates on contact. Add the oil, turn the heat to medium-high and add the peppers. Stir-fry for a couple of minutes, until the peppers begin to soften, and add the garlic and ginger. Stir-fry for 20 seconds, until the garlic and ginger begin to smell fragrant, and add the tofu, dried red pepper flakes and green onions. Stir-fry two minutes, give the sauce a stir and add to the pan. Cover and cook for three minutes. Remove the lid, stir the ingredients in the pan, and taste and adjust seasonings. Serve with rice or noodles.

STIR-FRIED TOFU WITH CARROTS AND RED PEPPERS
Make sure to cut the carrots and red peppers into the same size julienne (julienne are thin strips) so that they cook at the same rate. Both of these vegetables keep well in the refrigerator, so this should be a dish you can pull together easily.

Steps:
- Cut the tofu into 1/4-inch matchsticks and place them on paper towels. Place another paper towel on top and prepare the remaining ingredients.
- In a small bowl or measuring cup combine the soy sauce, rice wine or sherry, and the sesame oil. Combine the salt, pepper and sugar in another small bowl. Have all the ingredients within arm's reach of your pan.
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the tofu. Reduce the heat to medium and stir-fry 1 to 2 minutes, until it begins to brown. Add the garlic and ginger and stir-fry for no more than 10 seconds.
- Swirl in the remaining oil and add the carrots, red pepper, mushrooms, and spring onion or red onion. Turn the heat to high and stir-fry for 1 minute, or until the vegetables begin to soften. Add the salt, pepper and sugar, toss together and add the soy sauce mixture. Stir-fry for 1 to 2 minutes, until the vegetables are crisp-tender, stir in the cilantro and serve.

STIR-FRIED NOODLES WITH TOFU AND PEPPERS
This simple stir-fry is a dish to throw together when you want something like fried rice but don't have any cooked rice at hand. Begin soaking the noodles before you begin to chop the vegetables, and they'll be ready to stir-fry when the other prep is done.

VEGETARIAN, TOFU-LESS STIR-FRY
I specifically wanted to make a vegetarian dish without tofu since I know how hard it is to be a vegetarian and not like tofu. I went through a lot of experimenting and failed stir-fries before I narrowed in on this recipe, so I hope you like it. Please let me know if you have any suggestions.

TOFU WITH BELL PEPPERS
I got this out of a vegetarian cookbook I got years ago. This is one tofu recipe that even people who do not like tofu love!! My kids even love it!! I serve it over some Jasmin rice, and it gets devoured. If you want more sauce for the rice, double the amount of sauce you make).

Steps:
- Cut the tofu into bite sized cubes. Place in a bowl.
- Mix together the garlic, soy sauce, and sweet chili sauce. Drizzle over the tofu and coat. Let it sit for at least 30 minute.
- Heat the oil in a large pan. Add the onion and cook over high heat until brown and almost crispy (you can crisp them if you want). Remove them from the pan with a slotted spoon and let drain on paper towels.
- Remove the pan from the heat (it WILL spit at you if you do not). Add the tofu. You can return it to the heat once it has stopped spitting and cook for about 5 minute Remove all but 1 tbs of oil (I usually do not have to remove any oil), and all of the tofu.
- Add the bell pepper and cook for 2-3 minutes or until soft. Turn down heat and let cool for a bit so the sauce does not spit on you. Return the tofu, onions, and leftover sauce to pan. Heat through.

- Remove tofu from packaging, and discard liquid. Cut tofu into 1/2" - 3/4" pieces. Lay paper towels in large plate. Place tofu pieces on paper towels, and top with more paper towels. Take heavy pot or brick, and press down on tofu. Allow water to press out for 50 minutes, changing out paper towels after 25 minutes
- Add hoisin, soy sauce, sugar, ginger, garlic, red pepper flakes and sesame oil to bowl. Transfer pressed tofu into bowl, toss to coat. Marinate for 30 minutes, and drain excess marinade
- While tofu marinates, melt butter in large skillet. Add onions and a pinch of salt, and cook slowly over medium-low heat for 10 minutes, tossing occasionally, until golden. Add bell peppers, turn heat to medium, and stir fry for 10 minutes, tossing occasionally. When peppers are soft, remove peppers and onions and set aside
- Add avocado oil to skillet, and turn heat to medium-high. Add tofu and stir fry. Make sure to leave tofu alone for 3-4 minutes at a time before tossing, so char and deep color can develop. After about 10 minutes, return peppers and onions to skillet, and stir fry for another 2 minutes

- Drain tofu and wrap in paper towel. Place something heavy on top (I use a cast iron skillet), and let sit for about 15 minutes. Once pressed, cut into 1" cubes.
- Meanwhile in a medium bowl, whisk soy sauce with hoisin, sugar and sesame oil. Toss with pressed and cubed tofu, and allow to marinate for 15 minutes, tossing occasionally to coat tofu. Remove tofu from marinate (reserve remaining marinade for the vegetables).
- Heat 1 tbsp of canola oil in a wok or a large frying pan over medium-high heat. Add tofu, and cook, stirring frequently until tofu starts to caramelize and turn a deep brown, about 3 minutes. Remove from pan and set aside.
- Add remaining canola oil, onion and bell peppers. Cook, stirring constantly, until onion starts to brown and bell peppers have a few char marks on them. About 3 minutes. Vegetables should be a vibrant red and still have some crunch.
