  • In a small bowl, combine the tomatoes, onions, 2 tablespoons oil, basil, vinegar, oregano, salt and pepper; set aside., Lightly brush both sides of bread slices with remaining oil. Arrange on ungreased baking sheets. Broil 3-4 in. from the heat for 2-3 minutes on each side or until golden brown. , Rub garlic over bread slices. With a slotted spoon, top each slice with tomato mixture.

Tomato and Basil Bruschetta image

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.

  • On a baking sheet, line up baguette slices. Toast in oven for about 3 minutes or until light golden brown.   • Core and chop the tomatoes, then transfer to a colander over a bowl or in the sink. Add the salt and gently stir. Let drain for up to 2 hours.
  • Meanwhile, make the garlic oil: In a small saucepan, warm the olive oil and garlic over low heat until the garlic is softened and fragrant, about 5 minutes, making sure the garlic doesn't brown. Set aside to cool.

  • 1. Par boil tomatoes, for 1 minute; remove skin, cut in half remove seeds if possible.
