- Melt butter in a pot over medium-low heat. Stir rice, jalapeno, green onion, and garlic together in the melted butter until rice is completely coated with butter. Add chili powder, cumin, salt, chipotle chile powder, and cayenne pepper; cook and stir until fragrant, about 1 minute.
- Stir chicken stock and tomato sauce into rice mixture. Bring to a simmer, cover the pot, reduce heat to low, and simmer for 20 minutes. Turn heat off and leave pot covered on the burner for 8 minutes. Remove cover and fluff rice with a fork.

Steps:
- Mix all ingredients in sauce pan.
- Bring to boil and stir well.
- Cover, reduce heat to low and simmer till liquid is absorbed and rice is tender (20 to 30 minutes).
- Note I cook this in the microwave so the time is approximate.
- To microwave, mix all ingredients in a microwaveable bowl about 2 quart size. Cover loosely with plastic wrap with small vent. Push rice button and about midway through cycle press stop/pause and stir then continue cycle.

- Bring chicken broth and tomato sauce to a boil in a small saucepan, about 5 minutes. Reduce heat to medium and maintain a simmer while preparing the remaining ingredients.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate, reserving bacon grease in the skillet. Chop bacon.
- Cook and stir onion in reserved bacon grease over medium heat until tender, about 5 minutes. Stir in rice; cook and stir until lightly browned, 3 to 5 minutes. Pour boiling chicken broth and tomato sauce into rice mixture; add diced tomatoes, green peppers, and chopped bacon. Season with chili powder, salt, and pepper. Cover and simmer until rice is tender and liquid is absorbed, 30 to 40 minutes. Stir black olives and corn into rice mixture before serving.

Since I can't eat entire tomatoes, I'm grateful for a recipe that uses tomato sauce instead of crushed tomatoes, etc. This recipe comes from Host Chelsie Kenyon on About.com's Mexican cooking forum. Steps:
- In medium saucepan, heat oil over medium heat. Add in garlic and onion. Saute 1-2 minutes until softened.
- Add in dry rice. While stirring, cook for about 5 minutes until rice is golden brown.
- Slowly add in broth and tomato sauce into rice, not directly onto hot pan. Stir; bring to boil.
- Turn heat to low and cover. Let simmer for 20 minutes.
- Fluff with fork.

- In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
- Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. - Fill a large sauce pan with cold water to at least a 3-inch deph (7.5 cm), add in a generous 1/2 tbsp white wine vinegar and heat it with a high heat
- Meanwhile, heat a large fry pan with a medium-high heat and add in a generous 2 tbsp extra virgin olive oil, after 1 minute add in 1/2 onion finely diced and 3 coves garlic finely minced, mix with the olive oil, after 2 minutes add in one 15 ounce can of diced tomatoes (drained into a sieve first), a generous 1/2 tsp of sweet smoked paprika, 1/4 tsp saffron threads and a pinch of sea salt & black pepper, mix together, after 1 minute add in 1 cup of round rice and mix so everything is well mixed together, then add in 3 cups of vegetable broth, give it a quick mix so everything is evenly distributed
- While the rice is cooking, the water in the sauce pan should be boiling, lower the fire to a low to low-medium heat so you end up with a simmer, using a whisk create a whirpool in the water and then add in 1 egg (before I added the egg I added it into a fine sieve to remove any of the runny egg whites), after 3 minutes the egg should be perfectly poached, using a slotted spoon, gently remove and transfer to a dish with paper towels, poach another egg in the same method
- About 8 to 10 minutes since we added the broth into the pan, lower the fire to a low-medium heat, let it simmer for 4 to 5 minutes or until all the broth has been incorporated into the rice
