Healthy scrambled eggs on a flatbread! A delicious breakfast pizza made on a flatbread and served with salsa.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Whisk eggs and milk together in a bowl; season with salt and pepper.
- Spray a large skillet with cooking spray; heat over medium-high heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Add sausage, bacon, tomatoes, and mushrooms, and cook until vegetables are soft, about 3 minutes.
- Spread scrambled mixture over flatbread; top with shredded Monterey Jack cheese.
- Bake flatbread pizza in the preheated oven until the cheese is bubbly and underside of the crust is golden brown, 5 to 7 minutes.

NAAN FLATBREAD PIZZA
I came up with this one day when I was scrounging around in my refrigerator for something to serve for lunch. Very tasty if I don't say so myself! I bake these on baker's parchment paper.

Steps:
- Pre-heat oven to 400 degrees F.
- In skillet, add olive oil, onion and bell pepper and saute for about 10 minutes on medium low heat stirring frequently.
- Add garlic and saute for an additional 2 minutes. Remove from heat.
- Place naan flat bread on a cookie sheet lined with baker's parchment paper.
- Slather on the ranch salad dressing to top side of naan.
- Then sprinkle cheese over top, then sprinkle bell pepper mixture from skillet on top of the cheese.
- Bake in oven for 15 minutes or until cheese is gooey melted.
- Remove and enjoy!

- Preheat oven to 350 degrees.
- Add small amount of Rosemary to each Flat bread and lightly coat with Olive Oil.
- Cover with cheese leaving about a half inch from the edge of the Flat bread.
- Lightly drizzle with Truffle Oil and place in the oven for 10-15 minutes or until all cheese has melted.
- For a little twist add some prosciutto or your other favorite before cooking.
BURATTA TRUFFLE PIZZA

- For the pizza dough: Combine the sugar, oil, yeast and 2 cups cold water in the bowl of a stand mixer fitted with a dough hook. Let the mixture sit until foamy, about 10 minutes.
- Mix the two types of flour and salt in a bowl. With the motor running, slowly add the flour mixture to the yeast mixture. Keep mixing until a smooth, elastic dough forms, about 10 minutes.
- Transfer the dough to a lightly greased baking sheet and cover loosely with plastic wrap. Let sit at room temperature for 1 hour.
- Divide the dough into four 12-ounce pieces and shape into balls. Transfer the balls to a lightly greased 9-by-13-inch baking dish and brush with oil. Cover tightly with plastic wrap and refrigerate for at least 24 hours (see Cook's Note).
- For the pizza: Place a pizza stone under the oven broiler. Preheat the broiler for 30 minutes.
- Working in batches, dust a ball of dough heavily with semolina flour. Using your fingertips, press the dough from the center out into a 10-inch circle about 1/4-inch thick, leaving a 1-inch thick crust around the edges.
- Hold the dough straight up, and with your fingertips circling the crust, let the dough naturally fall. Slide your fingers around the crust in a circular motion (like you would turn a steering wheel), until the dough in the center is stretched to about 1/8-inch thick. Repeat with the remaining dough balls. Transfer the dough to a semolina-dusted pizza peel.
- Spread each pizza with about 20 leaves fresh basil, then layer on 10 cherry tomato halves and break 2 burrata on top of each pizza and spread it on. Drizzle with oil.
- Slide a pizza onto the stone and broil until the cheese melts and the crust is puffed and charred in spots, 3 to 4 minutes. Repeat for the remaining pizzas. Top hot pizzas with 4 slices prosciutto and serve hot. Enjoy!
FLATBREAD WITH SAUSAGE, BELL PEPPERS, AND ASIAGO
Steps:
- 1. Set a pizza stone on the center rack. Preheat oven to 450°F, or higher if possible.
- 2. Sprinkle some flour on the work surface.
- 3. Divide the dough into halves or thirds, depending on how thin or thick you like your flatbread. Work the dough, rolling it into a ball, then flattening it into a circle with the palm of your hand. Press with your fingertips from the center outward, widening the circle. Start pushing this small circle into an oblong or rectangular shape, always leveling the thickness of the dough, so that the dough is about 14 by 6 inches.
- 4. Sprinkle some cornmeal on a pizza peel or the underside of a cookie sheet. Pick up the dough and, in one deft movement, transfer it to the peel.
- 5. Drizzle 1 tablespoon of the olive oil over the surface of the flatbread. Sprinkle half (or one third if making three flatbreads) of the Asiago evenly over the dough and then scatter one half or one third (if making three flatbreads) of the sausage and pepper over the surface.
- 6. Pick up the peel and open the oven door. Gently slide the flatbread onto the stone; a few shakes of the peel and the dough should slide right off, thanks to the cornmeal.
- 7. Bake the flatbread until the surface is bubbling and the bottom of the crust is turning a dark, golden color and crisping nicely, 15 minutes or less. Use the peel to remove the flatbread from the oven, cut into slices, and serve. While the first flatbread is baking, ready the next one. Bake it as you enjoy the first one. Repeat until you've used all the dough and other ingredients.
