TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Steps:
- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.
EASY TUNA PATTIES
These patties are great dipped in ketchup, mustard, or hot sauce. They are also great as a sandwich.

Steps:
- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

TUNA-PICKLE PITAS
Another great recipe I found on Betty Crocker's website. Celery seed is wonderful in tuna salad and the addition of coleslaw dressing will add a little zip. A nice "lunch on the go" sandwich.

- In a medium size bowl add drained tuna, shredded carrots, sweet pickle relish, coleslaw dressing and celery seed if using, mix together well.
- Into sliced and halved pita bread spoon the tuna mixtue. Serve immediately or refrigerate until chilled and serve.

TUNA PITA MELTS
This is a nice change from your average tuna melt, it makes a great snack or light dinner, I sometimes add in some sunflower seeds also, adjust all amounts to suit taste.

Steps:
- Set oven to 400 degrees.
- Place the whole pitas onto a baking sheet in one layer.
- Bake for 5 minutes or until lightly toasted.
- In a bowl mix together tuna with mayonnaise, pickle relish, lemon juice and dried dill until well combined.
- Season with seasoned salt and black pepper to taste, then mix in raisins.
- Divide/top the mixture between the 4 toasted pitas.
- Top with tomato slices, sprinkle the tomatoes lighty with salt and pepper, then top each tomato with about 1/4 cup grated cheddar cheese or mozzeralla cheese (or to taste).
- Bake for about 5-6 minutes or until the cheese is well melted.
WARM TUNA PITA POCKETS

- Mix first 4 ingredients in small bowl. Season tuna mixture with salt and pepper.
- Mix bell pepper, onion, and apple in medium bowl. Add half of vegetable mixture to tuna mixture and stir to blend. Add vinegar to remaining vegetable mixture; toss to combine. Season vegetable mixture to taste with salt and pepper.
- Place 1/4 cup lettuce in each pita half. Spoon 1/8 of tuna mixture, then 1/8 of vegetable mixture into each pita half. Place 2 pita halves on each of 4 plates and serve.
