TURBO PAN COOKER PIZZA

My mother said she didn't get this recipe with her Turbo Pan Cooker. I figured since she was so deprived that there must be others. This is an excellent recipe. I'm sure it can be used in any pan that is a steamer pan.

Turbo Pan Cooker Pizza image

Steps:

  • Place the water ina mixing bowl, add yeast and stir to mix.
  • Add oil, flour, sugar and salt and stir together to form a ball of dough.
  • Let stand 5 minutes.
  • After 5 miutes, turn out onto floured board, kinead in flour (on the board) tilll dough is stiff. Divide into 2 pieces and roll each into circle (to fit into the base of pan).
  • Specific instructions for the Turbo Cooker:
  • Place desired vegetables into base with 2 TBS water. Cover (valve closed) and cook on high heat for 4 minutes. Add in the sauce and seasoning and cook (valve closed) for 1 minute.
  • Reduce heat to medium-high, clean out the base and add 1 round of dough. Cover (valve open) 4 minutes.
  • Reduce heat to medium, turn dough witha spatula and spread 1/2 the sauce and vegetable mixture over the crust. Top with cheese. Cover (valve closed) 4 minutes.

Steps:

  • Heat the oil in a frying pan, then add the onion and garlic and cook for 5 mins. Tip in tomatoes and passata, and simmer for 5-10 mins or until the tomatoes are soft. Remove from the heat, stir in the basil, season, then allow to cool.
  • Put the flour into a bowl. Make a well in the centre, add the olive oil then add 6-7 tbsp warm water or enough to make a soft dough. Tip the dough onto a lightly floured surface and roll out to fit a 22cm frying pan or make 2 small ones. Heat a glug of olive oil in the frying pan, then press the dough into the pan and cook over a medium heat for 8-10 mins or until the base is golden.
  • Heat grill to hot. Spread the pizza base with the tomato sauce, scatter on the cheese and grill until it has melted and the base is golden at the edges. Serve immediately.

Scrape down the sides of the bowl to gather the dough into a rough ball; cover the bowl.
  • After 5 minutes, uncover the bowl and reach a bowl scraper or your wet hand down between the side of the bowl and the dough, as though you were going to lift the dough out. Instead of lifting, stretch the bottom of the dough up and over its top. Repeat three more times, turning the bowl 90° each time. This process of four stretches, which takes the place of kneading, is called a fold.
  • Re-cover the bowl, and after 5 minutes do another fold. Wait 5 minutes and repeat; then another 5 minutes, and do a fourth and final fold. Cover the bowl and let the dough rest, undisturbed, for 40 minutes. Then refrigerate it for a minimum of 12 hours, or up to 72 hours. It'll rise slowly as it chills, developing flavor; this long rise will also add flexibility to your schedule. , About 3 hours before you want to serve your pizza, prepare your pan. Pour 1 1/2 tablespoons (18g) olive oil into a well-seasoned cast iron skillet that’s 10” to 11” diameter across the top, and about 9” across the bottom. Heavy, dark cast iron will give you a superb crust; but if you don’t have it, use another oven-safe heavy-bottomed skillet of similar size, or a 10” round cake pan or 9” square pan.
