Steps:
- Melt 1 tbsp butter in saucepan, add onion and garlic, cook until softened.
- Add rice and turmeric; stir to coat.
- Add remaining ingredients,bring to boil, cover and simmer 17 minutes.
- Stir in remaining butter, remove bay leaf, serve.

BASMATI RICE WITH TURMERIC AND MUSHROOMS
This may also be baked in the oven instead of the stove top --- although some people would say that soaking the rice is not needed it is just something I have done for years with basmati rice, but by all means proceed with the recipe without presoaking, just make certain to wash the rice very well in cold water --- fresh sauteed mushrooms may be used in place of canned :)

Steps:
- Rinse the rice under cold water very well.
- Place the rice in a large bowl covered with cold water and let it soak for 30 minutes (changing the water after 15 minutes) before proceeding with the recipe.
- Melt butter in a heavy saucepan over medium heat.
- Add in onion, garlic and tumeric powder; saute until JUST beginning to brown (about 2 minutes).
- Add in rice, broth, mushrooms, salt and pepper (if using); bring to a boil.
- Reduce heat to low, cover with a tight fitting lid and simmer until the rice is tender (about 18-20 minutes).
- **NOTE** this rice can also be cooked, covered with a tight-fitting oven proof lid in the oven at 350 degrees for about 30-35 minutes, or until rice is desired tenderness.

- Wash the basmati rice thoroughly in several changes of water. Place the rice in a bowl. Add enough water to cover it by at least 1 1/2 inches. Let the rice soak for 1/2 hour. Drain the rice and reserve.
- While the rice is soaking, bring 12 cups of salted water in a deep pot to a boil. Add the drained rice, stir, and bring to a second boil. Cook the rice for exactly 4 minutes. Drain the rice and lightly pack it into a 2-quart greased bowl. Invert on an attractive platter. Lightly press around the rice to shape it into a dome.
- Decorate the rice dome with any or all of the garnishes. To adorn with silver foil, first peel off the top layer of paper. Lift the bottom sheet, with the silver foil still attached to it, and invert it over the rice at the center. Gently lift away the paper.
- CRISP FRIED OKRA:.
- Wash the okra and wipe dry. Trim both ends and slice into very thin (1/8-inh to 3/16-inch rounds). Heat the oil over high heat in a large frying pan. When it is very hot, add the okra in a single layer. Cook over medium heat, turning and tossing, until it is cooked and crispy brown, abot 20 minutes. Sprinkle with lemon juice, mix, remove the okra with a slotted spoon, and drain on paper towels.

TURMERIC RICE BY MADHUR JAFFREY
This simple, yet tasty rice dish is from a book I got in a sale a long time ago. I liked this dish as it used things I had to hand and had a similar taste to rice in a local curry house. The flavour is delicate and not in the least overpowering so will go well with most dishes. I have used leftovers in a stir fry and it was just as good.

- Put the rice in a bowl and wash in several changes of water.
- Drain and leave in a strainer set over a bowl.
- Put the oil in a heavy based saucepan and set over a medium high heat. When the oil is hot and beginning to bubble, put in the cloves, bay leaf, cardamom pods and cinnamon. Stir once or twice and put in the garlic.
- As soon as the garlic turns medium brown put in the rice, turmeric and salt. Stir gently for a minute. Now add the water and bring to the boil. Cover tightly, turn the heat down to very, very low and cook for 20 minutes. Stir the rice with a fork to separate the grains and serve garnished with chives or spring onions.

TURMERIC FRIED RICE
This is a fairly easy recipe for fried rice, yet it tastes really good. Good recipe to impress your loved ones. This is my favorite recipe for fried rice, especially when I am in a hurry, and not really in an 'all-day-in-the-kitchen' cooking mood:) Note: This is not a chinese fried rice which is usually more moist and can be eaten by itself. This is more of an Indian, or Sri lankan fried rice that is usually dry and is eaten with curries. I thought I should explain since some of you might be expecting more of a 'chinese' kind of a fried rice :)

Steps:
- In a medium pot, fry the onions and the garlic in the oil till golden brown.
- Add the grated carrot and fry for about 3 minutes.
- Add the chilli powder, turmeric, salt, and egg and stir for another minute.
- Stir in the rice.
- Stir the mixture 2-3 minutes until the rice is properly mixed with the rest of the ingredients.
- Pour 3 cups of water and stir well.
- Let it cook uncovered until the water boils.
- Lower the heat and cover the pot.
- Let it cook till all the water dissapears from the bottom of pan.
- (till you think the rice is cooked, usually it takes about 15 minutes).
- Serve hot with your favorite curry or as a side dish.
