SLOW-COOKER BANANA BREAD
I love to use my slow cooker. I started to experiment with making bread in it so I wouldn't have to heat up my kitchen by turning on my oven. It's so easy and simple. I make this slow-cooker banana bread all the time. -Nicole Gackowski, Antioch, California

- Place a piece of parchment paper into a 5-quart slow cooker, letting ends extend up sides. Grease paper with cooking spray. Combine the first 4 ingredients in a large bowl. Pour batter into prepared slow cooker. If desired, sprinkle cinnamon sugar over the top of batter. Cover slow cooker with a double layer of white paper towels; place lid securely over towels. , Cook, covered, on high until bread is lightly browned, 2-1/2 to 3 hours. To avoid scorching, rotate slow cooker insert a half turn midway through cooking, lifting carefully with oven mitts. Remove bread from slow cooker using parchment to lift; cool slightly before slicing.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
- Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.

UNCOOKED BANANA BREAD
Most of us find unleavened bread to be different. Try uncooked for something truly radical. This raw foodist vegan recipe will give your dehydrator and food processor a workout! Something very different! (And I haven't tried this one at all...)

Steps:
- Place Brazil nuts in food processor and process until mixture resembles flour.
- Add 2 of the bananas, salt, dates, and cinnamon to the processor and process until mixture is smooth.
- Pour into a bowl and add 2 bananas cut into small pieces and chopped walnuts stirring well.
- Spoon mixture onto teflex sheet and spread to ½ inch thickness.
- Dehydrate for 4 hours.
- Remove from teflex sheet by placing a mesh sheet on another dehydrator rack and placing it on top of the rack with the bread.
- Turn racks upside down and remove the teflex sheet.
- Dehydrate on mesh sheet for 4 more hours until bread is almost dry.
- Cut into pieces and dehydrate another hour.

- Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
- Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
- Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
- Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60-65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.
