GLAZED CINNAMON-CARDAMOM BUNS

These sweet rolls are soft, pillowy, scented with cardamom, and streaked with a sweet, buttery cinnamon swirl.

Steps:

  • For the Dough:
  • Heat milk in a small saucepan over low until just warm; an instant-read thermometer should register 105°F-115°F. Pour into the large bowl of a stand mixer. Whisk in yeast and let sit until foamy, 10-15 minutes. You should see a layer of foam on the surface; this means that the yeast is active.
  • Add egg, egg yolk, flour, granulated sugar, cardamom, and salt to yeast mixture and mix with dough hook on low speed until well combined. Increase speed to medium and continue to mix until dough is smooth and elastic, about 10 minutes. Gradually add butter 1 Tbsp. at a time, mixing to incorporate slightly before adding more. When 6 Tbsp. butter are incorporated, mix until dough is smooth, supple, and shiny, 10-15 minutes longer (you need to mix this long to develop the gluten).
  • Transfer dough to a large buttered bowl, cover with plastic wrap and a kitchen towel, and let sit at room temperature until doubled in size, 1-1 1/2 hours. Punch dough down, cover bowl tightly in plastic wrap, and chill overnight (the slow proof creates more flavor because it gives the yeast more time to process the sugar).
  • For the Filling and Assembly:
  • Mix butter, cinnamon, and 1/2 cup brown sugar in a medium bowl until combined.
  • Have your tools and filling nearby; you want to work quickly and keep dough as chilled as possible to make rolling more manageable. Turn out dough onto a lightly floured piece of parchment paper and roll to a 1/4"-thick rectangle, about 16"x12". Cover with plastic and chill until dough is firm, 30-60 minutes.
  • Spread butter mixture over two-thirds of dough. Fold plain side over the middle, then fold opposite third over (like folding an envelope). Roll to a 12"x8" rectangle about 1/2" thick. Slice lengthwise into eight 1"-thick strips.
  • Working one at a time, lay strip on clean work surface with long side facing you. Using your palms, gently twist each end in opposite directions until entire strip is spiraled. Hold one end of strip between a thumb and index finger. Working away from you, tightly wrap strip around 3 fingers. Wrap around fingers again, placing second loop closer to the palm of your hand. As you bring strip across the back of your hand, cross over first loop, angling toward the end of your index finger. Cross dough over front of your hand and tuck the end into the center while removing your fingers and pushing through to the other side to create a knot. Check out step-by-step photos here. You want to twist these tightly so that they rise while baking. If you're having trouble, twist them into any kind of knot that you can-just make sure it's wrapped tightly.
  • Divide cinnamon twists between 2 rimmed baking sheets, spacing evenly apart. Cover loosely with plastic wrap and let sit at room temperature until doubled in size, 45-60 minutes.
  • Place racks in upper and lower thirds of oven; preheat to 325°F. Bake cinnamon buns, rotating pans from top to bottom halfway through, until deeply golden brown, 25-30 minutes.
  • Bring remaining 1 cup brown sugar and 1/2 cup water to a boil in a small saucepan. Generously brush syrup over hot buns. If you like a sweeter pastry, wait 5 minutes, then brush again.
  • Do Ahead: Buns can be made 2 days ahead. Tightly wrap with plastic and store at room temperature.

For the Dough:
1 cup whole milk
1 Tbsp. active dry yeast
1 large egg
1 large egg yolk
3 1/2 cups (475 g) all-purpose flour
1/2 cup (105 g) granulated sugar
1 1/2 tsp. (3 g) ground cardamom
1 tsp. kosher salt
6 Tbsp. room temperature unsalted butter, plus more for bowl
For the Filling and Assembly:
6 Tbsp. unsalted butter, room temperature
3 Tbsp. ground cinnamon
1 1/2 cups (packed) brown sugar, divided
All-purpose flour (for surface)

ORANGE-CARDAMOM FLAN

Many countries have a version of caramelized custard turned out of its mold for serving-from Mexico's flan to France's crème renversée. No border seems to be a barrier to the migration of this universally popular dessert. Cardamom is rather an exotic spice, but it is sometimes used in classic American coffee cakes and other familiar baked goods. Do not buy preground cardamom because its flavor dissipates quickly and you'll miss the wonderful aroma released by cracking the seeds yourself. Oftentimes, cardamom seeds are sold still in their papery husks or pods, which should be peeled away to reveal the seeds within.

Steps:

  • To make the custard, lightly crush the cardamom seeds in a mortar and pestle or seal them inside a sturdy plastic bag and crush them with a rolling pin.
  • In a medium saucepan, heat the milk, crushed cardamom seeds, orange zest, and 3/4 cup (150 g) sugar, stirring to dissolve the sugar. Once warm, remove from the heat, cover, and let steep for 1 hour.
  • Set eight 4- to 6-ounce (125- to 180-ml) ramekins or custard cups in a roasting pan or deep baking dish.
  • To make the caramel, spread the 3/4 cup (150 g) sugar in an even layer in a medium heavy-bottomed skillet or saucepan. Pour 1/4 cup (60 ml) water evenly over the sugar to dampen it, but don't stir. Cook over medium heat until the sugar dissolves, then add the cream of tartar or lemon juice. Continue to cook without stirring, but swirl the pan if the sugar begins to brown unevenly. When the caramel turns dark amber in color and begins to foam a bit, remove from the heat and immediately add the remaining 1/4 cup (60 ml) water. The caramel will bubble up vigorously, then the bubbling will subside. Stir with a heatproof utensil until any hardened bits of caramel completely dissolve. Divide the hot caramel evenly among the 8 ramekins, then carefully swirl each ramekin so that the caramel coats the sides halfway up. Let cool completely.
  • Preheat the oven to 325°F (160°C).
  • To finish the custard, reheat the milk mixture until it's quite warm. In a medium bowl, whisk together the eggs and egg yolks, then gradually whisk the warm milk into the eggs, whisking constantly as you pour to prevent the eggs from cooking (don't whisk too vigorously, which will create air bubbles). Pour the mixture through a mesh strainer into a large measuring cup or pitcher.
  • Divide the custard mixture evenly among the caramel-lined ramekins. Fill the roasting pan or baking dish with warm water to reach halfway up the sides of the ramekins. Cover the pan tightly with aluminum foil and bake until the perimeters of the custards are just set and the centers are still slightly jiggly, 25 to 35 minutes.
  • Transfer the custards from the water bath to a wire rack and let cool completely. Cover with plastic wrap and refrigerate until chilled.
  • To unmold, run a sharp knife around the inside of each ramekin to loosen the custard, invert a serving plate or bowl over the ramekin, and turn them over together. Shake a few times to release the custard, then lift off the ramekin. (If the custard is stubborn, using a finger, gently pull it away from the side of the ramekin and invert again; it should slide out easily.) Pour any caramel remaining in the ramekin over the flan.
  • Serve the flans cold.
  • The baked custards will keep for up to 3 days in the refrigerator.
  • Surround the custards with poached dried fruit of your choosing. To make the poaching syrup: In a saucepan, heat 1 part honey or sugar to 4 parts water along with 1 cinnamon stick or 1 vanilla bean, split lengthwise. Once the syrup is warm, drop in pitted prunes; raisins; dried apricots, figs, cranberries, or cherries; or any combination of dried fruits. Simmer gently until the fruits are plump and soft.

Steps:

  • Preheat oven to 325°F. Place four 3/4-cup custard cups in 13x9x2-inch baking pan. Stir sugar and 1 tablespoon water in heavy small skillet over medium-low heat until sugar dissolves. Boil without stirring until syrup is deep amber color, occasionally brushing down sides of skillet with pastry brush dipped into water and swirling skillet, about 8 minutes. Immediately pour syrup into custard cups, dividing equally.
  • Whisk milk and cinnamon in small saucepan to blend; bring to simmer. Cover and let cool 15 minutes.
  • Whisk eggs to blend in medium bowl. Gradually whisk in cinnamon milk, then sweetened condensed milk and vanilla. Divide among caramel-lined custard cups. Pour enough hot water into baking pan to come halfway up sides of cups. Bake custards until set in center, about 55 minutes. Cool in water in pan. Remove custard cups from water; cover and refrigerate overnight.
  • Run small knife around custards to loosen. To unmold each, place small plate atop custard; firmly holding plate and custard cup together, invert and shake gently, allowing custard and caramel to settle onto plate.
