FRENCH VANILLA CREPES
I had to make a fancy dessert for about 45 people so I made one up. I served these crepes filled with a sweet ricotta filling, froze them and drizzled them with raspberry and chocolate sauce and whipped cream. They were a huge hit and very simple. They work great at breakfast time with fruit or egg filling too.

- Combine eggs and salt. Beat in flour alternately with milk.

VANILLA CREPES
When I was a little girl, my mother would always make us crepes on Sundays. I also loved the smell of vanilla when my mother would make her cookies. So, I would always ask her to make her cookies, and when she refused, I would take out the vanilla and sit it next to me with the cap open, so that I could breathe the aroma. My mother get a kick out of this, and said, well, if it's that important, we'll add a little vanilla kick, just for you. After the first time she put the vanilla in, there was never a last...it became a tradition.

Steps:
- In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended.
- Heat a crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray. Pour about 1/4 cup of batter into the pan and tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.
- Fill crepes with your favorite fruit, cream, caramel or even ice cream or cheese to serve.

CREPES WITH VANILLA CREAM SAUCE (BOB EVANS)

Steps:
- In a blender mix together the milk, eggs and vanilla.
- Stir in the flour, sugar, salt and melted butter until well blended.
- Heat a crepe pan or a good non stick 8 " pan over medium heat until hot.
- Lightly coat with a tiny bit of olive oil.
- Pour 1/4 cup of batter into the pan and tip pan to spread the batter evenly. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned, it will have a lacy look.
- Place crepes on parchment papaer or wax paper to seperate each one.
- Fill crepes with the Vanilla Cream Sauce. Directions below --.
- VANILLA CREAM SAUCE DIRECTIONS.
- Mix all ingredients for Vanilla Cream Sauce together.
- Spoon into center of crepe and fold over seam side down.
- Top with fresh fruit of choice. I like to also drizzle a lil bit of the vanilla cream sauce on top to keep blueberries from rolling off the crepes!

Steps:
- Combine flour, sugar, cornstarch, and salt in a small saucepan.
- Add milk gradually.
- Cook, stirring, over low heat until thickened. (Do not rush this stage as it gets rid of the raw flour flavor).
- Blend a little of the hot mixture into egg yolks.
- Stir yolks into saucepan. Cook 1 minute. Remove from heat.
- Add vanilla and butter. Cool.
- When ready to serve fold in diced bananas. Place a small amount of filling on each crepe and roll.

SIMPLE AND BASIC CREPE BATTER
An easy crepe recipe that freezes well. I make this whole batch and freeze. When I need a few I defrost and fill with a sweet or svory filling.

Steps:
- Beat eggs and salt. Add flour alternately with milk, beating with electric mixer or whisk until smooth. Stir in melted butter.
- Allow crepe batter to stand for an hour or more in the refrigerator before cooking. The flour may expand and some of the bubbles will collapse. The batter should be the same thickness as heavy cream. If the batter is too thick, add 1 to 2 tablespoons of milk and stir well.
- To cook crepes, use a non-stick coated pan. Heat pan to medium-high heat. With one hand, pour in 3 tablespoons batter and lift the pan above the heating unit. Quickly rotate pan until batter covers bottom and return it to heat. Cook until light brown. Turn and brown other side for a few seconds.
- Dessert Crepes: Follow basic crepe recipe above and add 2 tablespoons sugar with the flour and 1 teaspoon vanilla extract with the milk.
- Note: Freeze crepes by separating with pieces of waxes paper and wrap air-tight. May be stored for 3 months.

- Whisk milk and instant pudding and let sit till thickened, about 5 minutes.
- Fold into Whipped Heavy Cream.
- Fill pastry bag and pipe into desired shell, or spoon into trifle, etc.
- Now, I use this in my cream puffs and top with drizzled chocolate. I use these with a hint of cinnamon inside dessert crepes and top with berry sauce (see recipe for mixed berry sauce). I use this as a frosting for cupcakes, and brownies. The possibilities are endless.
- This is enough for one cream puff recipe. Feel free to double or triple according to your needs.
SIMPLE DELICIOUS CREPES
Crepes are very simple to make, and there isn't a lot of difference in different recipes. However, in this one I used real Mexican vanilla and brown sugar, and it made a wonderful, light, slightly sweet crepe that was perfect with fresh fruit fillings, or dessert fillings.

- Melt the butter in a glass dish in the microwave and let cool. You don't want it to curdle the eggs.
- Use a blender to make this easier.
- Toss in the four eggs and swirl a few times to lightly beat them.
- Add vanilla, butter (no margarine, it compromises the flavor) and milk and whirl a few times.
- Sift together salt and flour, and add to eggs and milk along with brown sugar.
- If you'd like, pour batter into a bowl and let sit in the refrigerator for an hour (or up to two days if you're not making them right away). This allows the batter to settle and removes the bubbles. I use this time to prep the fruit filling.
- Heat a crepe pan (I prefer the small ones so we can have more than one kind of crepe) over med heat.
- Spray with Pam or swirl a VERY small amount of butter in the pan. Heat pan. Add about 2 Tbs (I use a small ladle) of batter and swirl to coat the pan until it stops swirling. Put over heat and cook until the edges start to brown slightly. You can turn them if you'd like, or simply turn out onto a plate.
- Can be kept up to a week in the fridge or two months in the freezer. They freeze very well!
- You could omit the vanilla and sugar and make savory crepes.
