- In a 5- or 6-qt. slow cooker, whisk together stock, diced tomatoes and tomato paste. Stir in vegetables, garlic, Italian seasoning and salt. Cook, covered, on low until vegetables are tender, 6-8 hours. If desired, top with fresh basil.

Steps:
- Saute the first 3 ingredients until soft, about 15-20 minutes.
- Add salt and pepper and stir.
- Add the rinsed and drained beans.
- Gently saute the beans with cabbage-onion mixture for 10 minutes.
- Stir in the tomato and simmer for 5 more minutes.
- Adjust the seasonings.
- Serve over individual bowls of brown rice, top with yogurt or sour cream and sprinkle with chopped cilantro.

- Heat the oil in a large, heavy skillet over medium-high heat and add the chili powder and ground cumin. Allow the spices to sizzle for about half a minute, until very fragrant, and stir in the black beans and 1/2 cup water. Cook, stirring and mashing the beans with the back of your spoon, for 5 to 10 minutes, until thick and fragrant. Be careful that you don't let the beans dry out too much. If they do, add a little more water. Remove from the heat.
- Heat the tortillas, two or three at a time, in a dry skillet over medium-high heat, or in a microwave. Top with the black beans, salsa, cheese and cabbage. Fold the filled tortillas over if desired and serve. Alternatively, one at a time, place a tortilla on a plate, top with the beans and cheese and heat through for 30 seconds to a minute in a microwave. Then top with salsa and a generous handful of cabbage, and serve.

- To begin, heat the olive oil in a stockpot or large frying pan over medium. Once warm, add in the diced onion and cook for 2-3 minutes, or until it's starting to look transparent. Then, add in the garlic, serrano chile, and bell pepper, and cook for 2-3 minutes longer.
- Next, stir in the chopped tomatoes, cumin, oregano, salt, and pepper. Cook for about 6-8 minutes, stirring occasionally.
- Then, add in the cooked beans and water and bring the soup to a low boil. Once boiling, reduce the heat to low-medium and simmer gently for about 10-12 more minutes.
- After about 8 minutes of simmering, transfer roughly ⅓ of the soup to a blender and mix on high until smooth. Once blended, add it back to the pot and simmer for a final few minutes.
