VEGAN BANANA BREAD
Coconut oil, ground flaxseed, and almond milk keep this eggless, dairy-free banana bread nice and moist.

Steps:
- Preheat oven to 350 degrees. Oil and flour a 9-by-5-inch loaf pan.
- Sprinkle flaxseed over 1/3 cup water. Let stand until slightly thickened, about 5 minutes. Stir to combine.
- In a large bowl, whisk together flour, sugar, baking soda, and salt. Stir in oil, almond milk, flaxseed mixture, bananas, and vanilla.
- Bake until a toothpick inserted in center comes out clean, 60 to 65 minutes. Let bread cool in pan 15 minutes. Remove bread from pan and let cool completely on a wire rack. Store tightly wrapped in plastic, up to 3 days, or freeze, up to 3 months.
VEGAN BANANA BREAD RECIPE BY TASTY
Here's what you need: ripe bananas, vegetable oil, unsweetened applesauce, light brown sugar, vanilla extract, salt, baking powder, all purpose flour

- Preheat the oven to 350° F.
- Grease a standard loaf pan with vegetable oil or spray.
- Mix all the dry ingredients in a bowl and gently stir.
- In a separate bowl, mix the applesauce, brown sugar, vanilla, and oil until evenly combined.
- Mash the bananas finely with a fork in a separate bowl and add to the
- wet ingredients.
- Gently fold in the bowl of dry ingredients to the wet ingredients until everything is evenly combined. Do not over-mix.
- Place the banana bread in the preheated oven for 60-70 minutes. Insert a toothpick into the loaf to see if it is ready. If the toothpick does not come out clean, bake for a few more minutes.
- Leave the banana bread in the loaf pan for 10 minutes to settle, then transfer to a wire cooling rack and allow to cool completely. Enjoy!

- Heat the oven to 180C/160C fan/gas 4. Mash the bananas in a medium bowl with a fork, then mix in the oil and sugar until combined.
- Add the flour, baking powder, cinnamon and dried fruit and seed mix. Mix until well combined.
- Line a cupcake tray with 10-12 cupcake cases (the amount you need will depend on how big the bananas are) and fill them ¾ full of the mixture. Sprinkle with the oats and mixed seeds.
- Bake for 25 mins, or until a skewer inserted into the middle of a muffin comes out clean. Leave to cool on a wire rack.

This is a sweet and delicious version of regular nut bread, but for the vegan-lovin' hippies - or heart happy. I always have brown bananas! I love this recipe because I don't have to use milk or eggs. It's really moist and easy. I make it for all my neighbors, and they have no idea it's vegan. Once you get this down, you can mix and have in the oven in less than 10 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Grease two 9x5-inch loaf pans.
- Mash bananas in a large bowl. Add oil, sugar, lemon juice, and vanilla extract.
- Mix pastry flour, wheat germ, salt, baking soda, and baking powder together in a bowl. Add flour mixture to the bowl with the banana mixture and stir until just combined; do not over mix. Fold in nuts. Pour batter into the prepared loaf pans.
- Bake in the preheated oven until a knife inserted in the middle comes out clean, 45 to 50 minutes.
