Steps:

  • Melt butter in large saucepan on medium heat. Add onions; cook and stir 5 min. or until crisp-tender. Add flour; cook 1 min. or until bubbly, stirring constantly.
  • Stir in milk. Bring to boil; simmer on medium-low heat 1 min.
  • Add remaining ingredients; stir. Cook 5 to 8 min. or until VELVEETA is completely melted and soup is heated through, stirring occasionally.

I usually avoid processed food like the plague, but here, I'll make an exception for easy-melting value and texture. A great warm-you up dinner when you don't feel like waiting forever till soup's on. Found this in Cooking Light several years ago.

Broccoli & Velveeta Cheese Soup image

Steps:

  • Heat a large nonstick saucepan coated with cooking spray over medium-high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium-high heat. Reduce heat to medium; cook 10 minutes.
  • Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts.
  • Place one-third of the soup in a blender or food processor, and process until smooth. Return pureed soup mixture to pan.

This soup is so wonderful served with hot muffins on a cold winter day! The different vegetables in a creamy, cheesy soup. If soup is not thick enough, stir in instant potato flakes to desired thickness. This will make the soup thick (and a little grainy.)

Steps:

  • Place the mixed vegetables and frozen broccoli into a large pot. Pour in the chicken stock and bring to a boil. Steps:

  • Place bouillon cubes in 3 cups hot water to dissolve to make broth. Sautee onions in butter in 6-quart pot or Dutch oven. Add broth and 3 more cups of water and bring to boil.
  • Reduce heat to simmer and add noodles. Cook until noodles are done (about 15 minutes). Add broccoli and simmer for 5 minutes.
