Steps:

  • 1. Mix the flour, salt, and pepper in a shallow dish. Dredge the meat in the seasoned flour. Heat the oil in a large skillet over medium-high. Cook the venison for 2 minutes per side, and then transfer to a plate and cover to keep warm.
  • 2. Reduce the heat in the skillet to medium, add the shallots and garlic, and cook for 1 minute, stirring constantly. Add the mushrooms and sauté for about 3 minutes. Stir in the tomato paste. Add the wine and chicken broth, raise heat to medium-high, and cook for 1 minute more. Return the meat to the pan and simmer until heated, about 1 minute. Season with salt and pepper to taste.

1/3 cup all-purpose flour
1/4 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
1 to 1 1/2 pounds boneless venison steak, cut into 1/2-inch-thick slices
1 tablespoon olive oil
1/4 cup chopped shallots
1 garlic clove, minced
1 1/2 cups chopped mushrooms
1 tablespoon tomato paste
1/2 cup red wine
1/2 cup low-sodium chicken broth

JALAPEñO ROLLED VENISON LOIN

Creamy cheese spiked with jalapeño peppers in this roulade of cumin- and garlic-flavored venison keeps the lean meat moist. This is one of my husband's favorite ways to share his deer harvest each winter.

Steps:

  • In a large bowl, combine the olive oil, vinegar, onion, garlic, salt, cumin, chili powder, and white pepper.
  • Slice halfway through the loin down the length of the loin. Lay the sliced loin on a piece of plastic wrap. Cover with another piece of plastic wrap. With a meat mallet or pounder, flatten the loin to an even thickness, about 1/4 inch. Remove the plastic wrap and put the venison in the bowl with the seasonings. Cover and refrigerate for at least 1 hour and up to 8 hours.
  • Remove the venison from the marinade and discard the marinade. Lay the venison out flat and pat the surface dry with paper towels. Spread the cream cheese over the top of the meat. Sprinkle with the jalapeños. Roll up the venison to form a long log and secure with toothpicks if needed.
  • Heat an oiled grill pan over medium heat until hot. Add the venison and cook for 8 minutes, turning often, or until the center reaches 165°F. Transfer the venison to a cutting board and let stand for 2 minutes before slicing into rounds. Serve at once.

1/4 cup olive oil, plus more for the pan
1/4 cup red wine vinegar
1/4 cup diced onion
4 garlic cloves
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon ground white pepper
1 (2-pound) venison backstrap (loin)
1 (8-ounce) package cream cheese, softened
3 jalapeño peppers, seeded and diced

  • Trim any fat or tendons from the outside of the haunch and reserve them for the sauce. Season the meat with salt all over liberally, place it on a plate and keep in the fridge for 24 hours.
  • Prepare the brine: place the rosemary and other ingredients in a large pan, half-fill it with water and bring it to the boil. Immediately take it off the heat and let it cool to room temperature. When it’s cold, immerse the meat in the brine, scrape all the salt and juices in, cover the pan and keep it in the fridge for 24 hours.
  • Remove the meat from the brine, place it on a plate and dry in the fridge for at least 2 hours or overnight.
  • Prepare the chocolate sauce base: brown the trimmings in a skillet with a little oil. Chop the onion roughly and add to the skillet with the bay leaf. Cook for 5-10 minutes until everything’s browned.
