Traditional Vietnamese coffee with an optional delicious twist! This recipe is based on what I learned from my parents, who drink it every day, and from my 5 years of experience as a barista.

- Pour some boiling water in a glass. Let sit to warm the glass, about 1 minute. Pour out water.
- Pour condensed milk into the warmed glass. Top with coffee. Stir in creamer and hot cocoa mix.

Steps:
- Pour the ground coffee into a Vietnamese phin filter base. Place the phin filter strainer on top of the coffee.
- Pour the sweetened condensed milk into a glass.
- Place the phin assembly on top of the glass. Pour hot water into the phin filter. Place the phin filter lid on top and let the coffee drip through the filter into the glass.
- Stir well before serving.
- Enjoy!

- Pour the milk into the bottom of an 8 ounce glass.
- Carefully pour in the coffee, trying not to disturb the layer of milk.
- Stir the milk up from bottom and sip the coffee (there will probably be some milk left in the bottom of the glass when you are finished).
- Variation: This coffee may also be served iced; add some ice cubes on top of the layer of condensed milk and proceed as above.

- Brew coffee with water using your preferred method to make brewed coffee. Spoon 2 tablespoons of sweetened condensed milk into each of 4 coffee cups. Pour 1 cup of fresh hot coffee into each cup, and stir to dissolve the milk.
- Serve guests cups of coffee, and give each one a tall glass with 4 ice cubes, and a long handled spoon. Guests pour hot coffee over the ice cubes and stir briskly with the long handled spoon, making an agreeable clatter with the ice cubes to chill the coffee.

Banh bo nuong is a traditional Vietnamese dessert, perhaps the most popular! The cake is known for its "honeycomb" crumb, which makes it airy and light. This is not a typical cake-banh bo nuong is pleasantly chewy, with the perfect balance of coconut and pandan flavors. You can find ingredients like tapioca flour, rice flour, pandan flavoring paste, and single-acting baking powder at Asian markets or online.

- Arrange an oven rack in the center position. Preheat the oven to 350°F (180°C). Place a 7-inch angel food cake pan, 6-inch round cake pan with 3-inch-high walls, or 6-inch square cake pan with 3-inch-high walls on the center oven rack to preheat while you make the batter.
- In a medium bowl, stir together the tapioca flour, rice flour, and baking powder.
- In a large bowl, combine the coconut milk, sugar, coconut oil, and salt. Stir slowly with a spoon to dissolve most of the sugar, but avoid incorporating air.
- Place a sieve on top of the bowl with the coconut milk mixture. Add the eggs to the sieve and, with a fork, carefully poke to break the yolks. (Do not beat or whisk-incorporating air bubbles will prevent the cake from coming out right). Use a small rubber spatula to gently push the eggs through the sieve, discarding the membrane part of the egg whites. Clean and dry the sieve.
- Add the pandan extract to the coconut and egg mixture and stir gently with the spatula until homogenous in color, still avoiding incorporating any air. Gently stir in the dry ingredients; the batter will be lumpy.
- Set the sieve over a separate large bowl, then gently push the batter through the sieve to remove any lumps. Gently stir the batter just until homogenous.
- Carefully remove the hot pan from the oven and pour in the batter. Return the pan to the oven and bake for 45 minutes, until a skewer inserted into the center comes out sticky with a few crumbs attached. Remove from the oven and flip the pan upside down onto a wire rack. Let the cake cool for 30-60 minutes (this will prevent the cake from collapsing on itself and losing its honeycomb structure).
- Carefully run a paring knife or small offset spatula around the edges and bottom of the pan and gently unmold the cake. Slice the cake and serve with tea or coffee.

- In a mason jar, add sweetened condensed milk. Place the phin sauce on top of the jar and then brewing chamber; add a scoop of coffee. Shake it a little to distribute coffee grind uniformly. Place the press in before pouring a little bit of boiling water. Wait until the coffee grinds have absorbed the water before filling up the brewing chamber. Place the lid and let the coffee brew for 5 minutes.
- When it's done, stir very well until coffee and condensed milk are well blended. Transfer the hot coffee mixture into a tall glass filled with ice cubes; stir to blend.

- There are two ways to make Vietnamese coffee. The simplest method is to steep coffee grounds in a heatproof container with 2/3 cup boiling water for 4 minutes. Pour through a coffee filter into a heatproof glass.
- Or use a metal filter, which we recommend. Bring 1 cup water to a boil. Remove top screen from filter, add coffee, then screw on top screen. Place filter over a heatproof 12-ounce glass or measuring cup.
- Pour a splash of the hot water into filter; this will allow the coffee grounds to bloom. When coffee begins to drip through, add enough water to reach top of filter. Place lid on filter and let coffee drip for 4 minutes. If coffee stops dripping sooner, gently loosen screw to relieve pressure.
- Stir in condensed milk until blended. Add ice, stir, and serve.

- We used the Trung Nguyen brand of ground coffee for this Vietnamese coffee recipe, but you can use any good French roast coffee, too.
- Our Phin Vietnamese coffee filters are the 6-ounce size, but they come in different sizes depending upon your brewing needs. Alternatively, you can use a French coffee press or your favorite drip coffee method.
- DO NOT shake the filters or compress the coffee, or the coffee grounds will drop into the holes of the coffee filter and plug up the holes! The result will be that the coffee takes forever to drip, or the grounds may clog the filter entirely. Place the metal filter gently on top of the coffee.
