WARM APPLE CRISP

With Fall right around the corner,I thought I would share with you my favorite recipe for apple crisp. I know that their are several posted but this is just to good not to list. It mixes together very easily, keeps well, and the top stays crisp. It also can be doubled,by baking in a 9 by 13 pan. Its a favorite among our family and friends, and I have had several requests for this recipe. It is so delicious served with icecream, or just on its own. The crunchy topping adds to the sweetness and compliments the apples. Its a wonderful Fall dessert.

Warm Apple Crisp image

Steps:

  • Mound apples in a buttered 9" pie plate, and sprinkle with the orange juice.
  • In a large bowl, combine sugar, flour, spices, and oatmeal.
  • Cut in butter until well mixed and crumbly.
  • Completely cover the apples with this mixture.
  • Bake at 375 for 45 minutes, or until apples are tender, and top is crisp.
  • Cool slightly.
  • Serve Warm with or without Icecream.
  • This can be re-warmed if made ahead of time.

4 cups sliced peeled apples (I use yellow delicious mixed with jonathons)
1/4 cup orange juice
1 cup sugar
3/4 cup flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 375°F. Butter 9 x 13 1/2-inch glass baking dish.
  • For Topping:
  • Mix old-fashioned oats, brown sugar, all purpose flour, ground cinnamon and salt in large bowl. Add unsalted butter and rub into mixture until coarse crumbs form. Mix in chopped walnuts.
  • For Filling:
  • Combine sliced apples, raisins, sugar, fresh lemon juice, flour and ground cinnamon in large bowl. Mix well to blend. Transfer apple-raisin filling to prepared dish. Spread topping over. Bake until topping is golden brown, about 55 minutes. Serve crisp warm with scoops of vanilla ice cream.

Steps:

  • Make the streusel topping and chill, core and slice the apples. In large pot, melt the butter and stir in the sugar and spices. Add all fruit and cook until soft. Stir in flour and vanilla, then cook until thick and pour into 4 (8 by 10-inch) baking dishes. Top with streusel and bake at 350 degrees F until crispy and fruit is bubbling (approx. 40 minutes). Serve warm.
  • Mix butter, sugar, and flour together, until crumbly and mealy looking. Add cinnamon, salt, and pecan pieces. Do not over mix. Store in refrigerator. Streusel topping may be doubled for a thicker coating.

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't).   • For crust:
  • Blend flour, sugar, salt, and baking powder in processor. Add butter; pulse until mixture resembles coarse meal. Mix 1/4 cup ice water and vinegar in small bowl; add to processor and pulse until moist clumps form, adding more ice water by teaspoonfuls if mixture is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill at least 1 hour. DO AHEAD: Can be made 1 day ahead. Keep chilled. Soften slightly at room temperature before rolling out.
  • Roll out dough on floured work surface to 13-inch round. Transfer to 9-inch-diameter deep-dish glass pie dish. Fold edges under and crimp, forming crust sides 1/4 inch above rim of pie dish. Freeze crust 20 minutes.
  • For filling:
  • Position rack in center of oven and preheat to 375°F. Mix brown sugar, flour, lemon peel, and cinnamon in large bowl. Add apple slices, raisins, and vanilla; toss until well coated. Transfer filling to unbaked crust, mounding filling slightly in center. Bake pie until apples begin to soften, about 40 minutes.
  • Meanwhile, prepare crumb topping:
  • Whisk flour, sugar, cinnamon, and salt in small bowl. Add butter and rub in with fingertips until mixture begins to clump together.
