PEPPER STEAK WITH NOODLES

- Mix 1 tbsp of the soy with 1 tbsp of the shaohsing wine, 1 crushed garlic clove and half the ginger. Pour over the steak and leave for at least 20 mins or up to 1 hr. Heat a frying pan over a high heat until very hot. Take the steak out of the marinade and scrape off as much of it as you can. Rub with the vegetable oil and put in the frying pan. Leave for 2 mins, then gently move it around to catch any bits of char, which will add to the flavour. After another 30 seconds, turn the steak and cook for 2½ mins on the other side. Transfer to a plate and set aside.
- Mix the cornflour into the remaining soy sauce and shaohsing wine and add 150ml water. Heat the sesame oil in a wok or frying pan over a medium-high heat and add the onion. Cook for 1 min, stirring, then add the peppers. Cook for 4 mins, stirring regularly. Once they are starting to soften with bits of char on them, add the remaining garlic and ginger, and soy mixture. As soon as the sauce starts to thicken, remove from the heat.
- Slice the steak thinly and add to the wok, just stirring through. Sprinkle with the sesame seeds and crushed peppercorns and serve with the noodles.

SOBA NOODLES WITH WASABI GARLIC PRAWNS

- Mix the wasabi, soy sauce and garlic in a small bowl. Bring a large pan of water to the boil and cook the noodles following pack instructions.
- Meanwhile, heat the butter in a frying pan. Once foaming, stir in the prawns and cook for a few mins until pink. Stir in the wasabi mixture with a couple of spoonfuls of the noodle cooking water and heat through. Add the noodles to the pan with the spring onions, toss together and divide between two plates.

WASABI TUNA STEAKS WITH HOKKIEN OR UDON NOODLES
Tuna with a blast of wasabi. We nearly always have this with sliced crisp-tender green beans folded into the noodles. Finely sliced snow peas work well too.

- Whisk together marinade of Wasabi, Soy and Sugar until Wasabi is blended and sugar is almost dissolved, pour into flat glass or ceramic dish. Add Tuna steaks, turning to coat all sides. Marinate for at least an hour.
- Heat pan (I prefer cast iron) over med high.
- With tongs shake excess marinade from Tuna and place in hot oil for 3-4 minutes then turn and cook other side to your taste (we like ours pretty rare, but watch the sides so you can see how far they are cooked through.
- When done, remove from pan and set aside. Add all remaining marinade to pan, stir until it bubbles, turn heat to low.
- Nuke the noodles in their packaging then empty them into the pan (along with beans or snow peas, if using) and stir to coat them well.
- Place noodles onto serving platter, top with Tuna Steaks.

ASIAN NOODLES WITH PAN-SEARED FLANK STEAK

- Mix 1 tablespoon soy sauce, honey and crushed red pepper in glass pie dish. Add flank steak; turn to coat. Let stand at room temperature 1 hour or refrigerate up to 4 hours, turning ccasionally.
- Whisk 4 teaspoons soy sauce, rice vinegar and next 4 ingredients in large bowl for dressing.
- Spray large nonstick skillet with nonstick spray; heat over medium heat. Add steak and cook to desired doneness, about 5 minutes per side for medium-rare. Let cool 10 minutes. Meanwhile, cook pasta in pot of boiling salted water until almost tender. Add carrots and peas; cook until vegetables and pasta are just tender, about 2 minutes. Drain. Transfer to bowl with dressing. Add onions and 4 tablespoons cilantro; toss. Season with salt and pepper. Thinly slice steak crosswise. Arrange steak atop pasta, spooning any juices over. Sprinkle with 1 tablespoon cilantro.
STEAKS WITH GARLIC-WASABI SAUCE
Found this recipe years ago in a Bon Appetit magazine. It sounds really good. It's from the Shin's in Le Meridien Hotel, NY Japanese "fusion" cuisine, (blend of Asian and Western).

- For SAUCE:.
- Combine all ingredients except wasabi mixture in large saucepan.
- Bring to boil.
- Reduce heat, cover and simmer 1 hour.
- Strain into medium saucepan.
- Boil until reduced to 1/2 cup, about 15 minutes.
- Stir in wasabi mixture.
- Season with salt and pepper. (Can be made 1 day ahead. Cover and chill).
- FOR STEAKS:.
- Preheat broiler.
- Combine breadcrumbs, parsley and garlic in small bowl.
- Melt 2 tablespoons butter in heavy large skillet over medium-low heat.
- Add onions and saute until tender and golden brown, about 15 minutes.
- Meanwhile, season steaks with salt and pepper.
- Broil to desired doneness, about 4 minutes per side for medium-rare.
- Sprinkle breadcrumbs over steaks.
- Broil until breadcrumbs are golden brown, about 2 minutes.
- Bring sauce to simmer.
- Remove from heat.
- Gradually add remaining 5 tablespoons butter, whisking just until melted.
- Arrange onions in center of 4 plates.
- Top with steaks.
- Spoon sauce around steaks and serve.
