WATERMELON AND FETA SALAD
This slightly sweet and savory watermelon-feta salad has cucumbers, olives and refreshing mint.

Steps:
- Cut the rind off the watermelon and cut the fruit into 1-inch cubes and transfer to a large serving bowl (you should have about 6 cups total). Top with the cucumber, feta and olives. Pour the oil over top and season with a large pinch of salt and pepper. Sprinkle with mint leaves and gently stir to combine right before serving.

- Peel and halve the red onion and cut into very fine half-moons and put in a small bowl to steep with juice of two limes (more if they are dried up) to bring out the transparent pinkness in the onions and diminish their "onion-ness.".
- Remove the rind and seeds (if necessary) from the watermelon, and cut into approximately 1 1/2 inch triangular chunks or use a melon baller. Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl. Add chopped mint, along with sprigs of parsley if desired.
- Pour onions, along with their juices, over the salad in a bowl, add olive oil and olives, then using your hands toss the salad gently so that the feta and melon don't lose their shape. Add a grinding of black pepper and taste to see whether the dressing needs more lime.

- Place the onion slices in a small bowl, add the juices from the limes; set aside.

A quick, easy and healthy salad that is perfect for BBQ's and picnics. If you cannot buy lemon scented olive oil try this quick alternative. Combine finely grated rind of 1 lemon and 1/4 cup extra virgin olive oil in a screw top jar. Secure lid and shake well.

- Place oil and pumpkin seeds in a cold frypan. Place over medium heat and cook, stirring occasionally, for 10 minutes, or until toasted. Season to taste with sea salt.
- Place in small bowl and set aside to cool.
- Slice watermelon into 1cm thick wedges and arrange on a serving plate.
- Crumble feta over watermelon and drizzle with lemon scented olive oil *SEE NOTE ABOVE*.
