Watermelon Agua Fresca image

Steps:

  • Add the sugar and 1/2 cup water to a small saucepan. Stir and bring to a simmer over medium heat until the sugar is melted, then turn off the heat and let cool.
  • Add the watermelon, lime zest and juice and 3 tablespoons of the cooled simple syrup to a blender. Blend until smooth. Pour into 4 small glasses.
  • Garnish each with a wheel of lime.

  • Place 2 1/2 cups watermelon and 3/4 cup cold water in blender. Puree until smooth. Pour agua fresca into large pitcher. Repeat 3 more times with remaining watermelon and cold water. Add lime juice, 1/4 cup sugar, and ginger juice to pitcher and stir to blend. Add more sugar by tablespoonfuls, if desired. Refrigerate until well chilled, at least 3 hours.
