CINNAMON RAISIN MUFFINS

I'm going to call these "healthy-ish" because of (a) there is only half a cup of sugar, compared to cupcakes I make that have like 2 cups, and (b) it is made with whole wheat flour. I don't know how to come up with the nutritional value. I have never tried these with regular flour, and the recipe, I must say, is pretty good, so...

Cinnamon Raisin Muffins image

Steps:

  • 1. Preheat oven to 400 degrees and grease 12-cup muffin pan
  • 2. In a large bowl, combine all dry ingredients except the raisins (brown sugar, cinnamon, nutmeg, flour, sugar, baking powder and salt)
  • 3. In another bowl, combine the melted butter with the milk, egg and vanilla until well mixed.
  • 4. Stir the wet ingredients into the dry ingredients until moist. Then fold in the raisins.
  • 5. Place the batter into the muffin pan. Bake for 10-12 minutes or until toothpick test comes out clean.*
  • 6. ***NOTE*** I do not own big muffin pans, like the ones that make those big muffins in resturaunts. Ergo, I guess I'm technically using "cupcake" pans. Real muffin pans I'm sure will take longer than 10 minutes to bake, and possibly you may not get a full 12, but I haven't been able to try that yet. Enjoy!

2 Tbsp cinnamon
4 Tbsp brown sugar
1/4 tsp nutmeg
2 1/2 c whole wheat flour
1/2 c sugar
1 Tbsp baking powder
1/2 tsp salt
1 c milk
1/2 c butter or margarine, melted
1 large egg
2 tsp vanilla extract
1 c raisins

Whole Wheat, Oatmeal, and Raisin Muffins image

Steps:

  • Lightly spoon flour into a dry measuring cup; level with a knife.
  • Combine flour and next 7 ingredients (through salt) in a large bowl, stirring with a whisk.
  • Stir in oats, dates, raisins, and cranberries. Make a well in center of mixture.
  • Combine buttermilk, oil, vanilla, and egg; add to flour mixture, stirring just until moist.
  • Stir in boiling water. Let batter stand 15 minutes.
  • Preheat oven to 375°.
  • Spoon batter into 12 muffin cups coated with cooking spray.
  • Bake at 375° for 20 minutes or until muffins spring back when touched lightly in center.
  • Remove muffins from pans immediately; place on a wire rack.

Steps:

  • In a bowl, thoroughly stir together flours, salt and baking powder.
  • Make a well in center of blended ingredients.
  • Combine egg, milk, oil, and honey; add all at once to dry ingredients.
  • Fold in raisins.
  • Fill greased muffin tins 2/3 full.
  • Bake at 400 degrees 16 to 18 minutes.

Whole Grain Raisin Muffins image

Steps:

  • In a medium bowl, mix milk, oil, eggs, brown sugar and molasses - whisking to combine.
  • Stir in the wheat bran and oats. Allow this to set for 15 minutes to soften the oats.
  • Preheat the oven to 425.
  • In a medium bowl, whisk together the flour, cinnamon, salt, and baking powder. Stir in the raisins. Add this mixture to the wet ingredients and stir just until combined.
  • Lightly spray a 12 cup muffin tin with cooking spray. Evenly distribute the batter between the 12 cups.
  • Bake for about 14 minutes, or until the top springs back when lightly touched.
  • When done, remove the muffins from the pans as soon as you can handle them.
  • Try not to leave them in the pan for longer than 5 minutes. Cool completely on a wire rack.

1 cup buttermilk
1/3 cup canola oil
2 eggs

CAN'T BELIEVE IT'S WHOLE GRAIN DELICIOUS RAISIN/CRAISIN MUFFINS

This is a simple but really delicious recipe I've developed over time. In spite of being whole grain, they are pretty light. Applesauce replaces the fat, and it isn't missed at all. They're sweet without being too sweet, and disappear right after I make them. My toddlers, hubby, and I all love them. Of course there's plenty of room for variation with this recipe--any type of dried fruit can be put in, you can play with spices, or add some packed pumpkin puree. Lots of options. ADDED NOTE: I figured out why these haven't risen for me the last couple times--I neglected to transfer the baking soda when I entered this recipe. That's fixed now and these should be as delicious as ever now!

Whole Wheat Carrot-Raisin Muffins image

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 14 muffin cups, or line with paper muffin liners.
  • Combine flour, baking soda, pumpkin pie spice, and salt in a bowl. Whisk together yogurt, vegetable oil, honey, vanilla extract, and orange juice in a separate bowl. Gently fold carrots into the yogurt mixture. Stir yogurt mixture into the flour mixture until just combined. Gently fold raisins into the batter. Scoop batter into prepared muffin cups until nearly full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 12 to 13 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
