WHOLE WHEAT BREAD IN THE BREAD MACHINE

I am the official breadmaker in our household. I developed this recipe to meet Jenny's longing for 100% whole wheat bread that was not too brick-like. Gluten flour, Vitamin C powder (ascorbic acid) and lecithin granules can all be found at bulk or health food stores that cater to bakers. They are dough conditioners that allow organic or stone ground whole wheat flour to make a reasonably light loaf. Of course, it will still not be as light as commercial white loaves - you wouldn't want it to be! Be sure to use hard, or bread, flour, and not a soft pastry type flour.

Whole Wheat Bread in the Bread Machine image

Steps:

  • Place all the ingredients in a bread machine with a 2 lb loaf capacity.
  • Put the ingredients into the pan more-or-less in the order given- wet ingredients first, yeast last.
  • This will allow you to use a timer if desired.
  • Use the whole wheat setting on the bread machine to bake the bread.
  • (cooking times will vary according to your bread machine)

Steps:

  • Place warm water, egg, olive oil, honey, molasses, chia seeds, whole wheat flour, salt, and yeast into a bread machine, in the order listed by the manufacturer. Run Dough cycle. Remove dough from the machine after the cycle is done, about 1 hour 30 minutes.
  • Spray a baking sheet with nonstick cooking spray. Form dough into 12 buns and arrange on the baking sheet. Let rise until doubled in size, about 55 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until buns are golden brown, about 14 minutes. Let cool for 10 minutes before transferring to a wire rack. Brush with melted butter.

Steps:

  • Follow directions for your machine for a 2-pound loaf of whole wheat bread.
  • Instructions for my machine are: Add all ingredients in the order listed. (I combine the water and powdered milk and heat them in microwave on high for 30 seconds before putting in baking pan and then add the remaining ingredients.).
  • Insert the baking pan into the oven chamber and lock the pan.
  • Select Whole Wheat setting and 2 pound loaf.
  • Press start.
  • When the baking is finished, I like to put the loaf in a large zip lock bag and seal it. Then place on wire rack to cool completely before slicing.

The key to baking a successful 100% whole wheat loaf, I have found (at least in a machine!!) is to have the ingredients at ROOM TEMPERATURE. When they are, this dough rises high to make a light,soft loaf. It's a staple in our house, hope you enjoy!

Terrific Whole Wheat in the Breadmaker! image

Steps:

  • NOTE: If you keep your whole wheat flour in the freezer (which is a good idea) be sure to remove it a few hours before-hand so it can warm to room temperature.
  • Measure the ingredients into your machine's loaf pan in the order listed. Be sure NOT to let the yeast touch the water. (By the way, I use bread machine yeast but I'm pretty sure regular yeast works too!).
  • Set it to "grain" and press start (so it should say 4:10 on the little screen).
  • When finished, remove from the machine, pull out the paddle if it's stuck in, and cover with a tea towel (to keep the crust soft) on a cooling rack. Let the loaf cool at least 20 minutes before slicing.
  • It should stay fresh 4-5 days in normal weather. We usually slice and freeze a portion of the loaf and it defrosts beautifully. Also makes lovely breadcrumbs!
