GREEN BEANS ALMONDINE

No matter how much I make, it's never enough and it couldn't be simpler to make. Even those who hate veggies love this green bean almondine!

Green Beans Almondine image

Steps:

  • Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes. Drain in a colander and refresh under cold running water to keep the nice green color.
  • Heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 5 minutes, watching closely so as to not burn. Take pan off of heat and add butter to melt. Return to heat and add garlic. Mix in green beans, season with salt and pepper, and continue to stir until heated through, 5 to 7 minutes.

Update 07/07/2008 - when I prepared this some time ago - I made some changes: increased the amount of onions, added crushed red pepper flakes, added a minced garlic clove. Then I sauteed it with cooking spray and then I combined the broth etc.Also have used Sazon Goya in the recipe.

Steps:

  • Combine chicken broth or vegetable broth, parsley flakes, minced onion and oregano leaves in a heavy non-reactive saucepan over high heat.
  • Bring to a boil and stir in rice and butter.
  • Cover pan and reduce heat to medium low; cook 20 minutes.
  • Remove from heat and let stand 5 minutes.
  • Fluff rice with a fork and gently toss in toasted almonds and serve with chicken, pork or fish with a green vegetable.
  • For Vegetarian meals do not use chicken broth use vegetable broth and margarine instead of butter.
  • Enjoy!

Monkfish Almondine image

Steps:

  • Combine the sweet paprika, smoked paprika and hot paprika, and the garlic powder in a small bowl. Sprinkle the fish with salt and pepper, and then sprinkle evenly, but sparingly, with the paprika mixture, and rub it in.
  • Heat a large, heavy skillet over medium-high heat, and add enough oil to coat the bottom of the skillet. When the skillet is hot, add the fish and sear on one side until dark, 3 to 4 minutes. Add the lemon zest and shallots to the skillet. Flip the fish; add the butter and almonds; and cook, basting the fish using a large spoon, until the almonds brown and the fish tests tender in the center when poked with a fork or toothpick, 2 to 3 minutes. Pick out the lemon zest and discard.
  • Transfer the fish, along with the shallots, almonds and some of the butter, to plates and serve right away.

Steps:

  • Preheat oven to 475°F.
  • In a 10-inch round baking dish toast almonds in oven until golden, about 5 minutes. Add butter and rice and toss to coat. Stir in broth and salt and cover dish with foil. Bake rice in lower third of oven 1 hour and 15 minutes, or until rice is tender. If all of broth has not been absorbed, bake rice, uncovered, 5 minutes more.
  • Rice may be made 1 day ahead and reheated before serving.

Steps:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion, chives, shallots and green pepper and sauté until soft.
  • Stir in the rice and sauté 2 to 3 minutes more.
  • Add the almonds, water chestnuts and mushrooms.
  • Turn the mixture into a casserole dish.
  • Stir in the boiling chicken broth and season with salt and pepper, to taste.
  • Cover the casserole and bake in a 350 degree oven for 1 hour and 15 minutes, or until the liquid is absorbed and the rice is tender.

  • Place green beans in a saucepan. Cover with water and bring to a boil. Cook until beans are al dente, about 5 minutes. Drain and set aside.
  • Melt butter in a large skillet over low heat. Add olive oil and mix thoroughly. Add almond slivers, mix until coated, and spread out evenly in the bottom of the skillet. From when I was expecting my first baby, Alex, to well past the birth of my second child, Paige, I used to meet my grandmother, Ga-Ga, at Luby's Cafeteria in my hometown for lunch on an almost monthly basis. Luby's had a mega-long (it seemed like a football field, but probably wasn't quite) serving line of prefilled small plates holding such comfort foods as Jell-O salad, macaroni and cheese, Salisbury steak, fried chicken, mashed potatoes, and slices of pie as far as the eye could see. But for me, the single most memorable dish at Luby's was their gloriously consistent Fish Almondine. No matter which seventeen sides I selected (okay, sometimes it was eighteen), Fish Almondine was always the main course for me. This is my best attempt to re-create the Luby's magic.   • Preheat the oven to 375 degrees F.
  • In a small bowl, combine the panko and almonds. Drizzle in the melted butter and toss until well combined.
  • Add the parsley and toss it in . . .

  • line the grill pan with foil. Brush both trout with melted butter and grill both sides on a medium heat until the skin is CRISPY. Put fresh dill and toasted almond slices in the centre of the trout.
  • Layer ONE side of the the trout with toasted almonds (this can be done easily by layering them on a flat tray under the grill until crisp, light brown and firm) to look like "scales"-place on 2 plates to rest.
  • Boil a small tub of single cream with a table of lemon,salt and pepper to taste and a small pinch of sugar. Stir VIGOROUSLY constantly!
