Steps:
- Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
- Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.

- Bring a large pot of cold water to a boil over high heat and salt it generously. Add the beans, and cook, uncovered, until just tender, about 6 to 8 minutes. Drain and rinse under cold water, set aside.
- Whisk the soy sauce, water, sesame oil, cornstarch, and pepper flakes in a small bowl.
- Heat the vegetable oil over medium-high heat in a large nonstick skillet. Add the shallots, garlic, ginger, and sesame seeds and cook until the vegetables are golden, about 3 minutes. Stir in the green beans and soy sauce mixture, bring to a boil, and cook until the green beans glaze, about 1 minute. Sprinkle with the vinegar and serve immediately.

'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

- When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet.
- Stir the beans to coat with oil.
- Cook until the beans are bright green and slightly browned in spots, about 10 minutes.

SZECHUAN GREEN BEANS
These are great. The recipe was originally from one of the Moosewood cookbooks with a bit of tweaking. They recommend "follow the cooking method exactly, as it is critical to the success of this dish. Both the wok and the oil should be hot, and the beans should cook quickly over high heat. They will attain an indescribable texture, both crunchy and very tender at the same time. Also, try to hang in there with the full quantity of garlic. The intense cooking heat will take the edge off it, leaving behind just the right amount of flavor." ENJOY!

- Place a medium-large wok or heavy deep skillet over medium high heat.
- After a minute, add the oil.
- Wait a minute or so, and add the green beans.

These are green beans with attitude. I think I got the recipe from Vegetarian Times, and it's never missed yet when served alongside a nice piece of fish or tuna steak. I like to cook the beans early in the day so I can throw it together in a snap at mealtime. I also use more garlic.

- Cook beans 4 minutes, transfer to ice water to stop cooking.
- Drain and dry.
- This can be done up to 8 hours in advance- store in fridge.
- Heat peanut oil in wok over high heat.
- Add garlic and stir fry until golden, about a minute.
- Transfer to paper towel to drain.
- Add green beans, salt and sesame seeds to the wok.
- Stir fry 3-4 minutes, pressing beans against side of pan so they char in places.
- Combine sesame oil and soy sauce.
- Add to pan along with the garlic from earlier.
- Heat through (less than a minute) and serve.
- These are great hot, room temperature, and even cold.
STIR-FRIED GARLIC GREEN BEANS

- Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
- Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
- Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

WOK OR SKILLET ASIAN-STYLE FRESH GREEN BEANS
To save some time cook the green beans ahead, place in a zippered plastic bag and refrigerate until ready to use. Make certain to pat the green beans dry using a paper towel before sautéing them. If you like spicy like my family does add in 1-2 teaspoons dried chili flakes when sautéing the garlic. Just to let you know, I tried this recipe using Green Giant brand frozen whole beans and it was not as successful as using the fresh beans. Prep time does not include boiling the beans. This is a really great recipe for fresh summer green beans!

- Cook the green beans in a pot of boiling salted water until JUST crisp-tender (about 3 minutes) plunge into an ice water bath to cool completely.
- Drain well and pat the beans dry using paper towels.
- Heat sesame oil in a wok or large skillet over high heat; add in garlic and chili flakes (if using) stir-fry 1 minute.
- Add in beans and stir-fry for about 2 minutes.
- Add in soy sauce, rice vinegar, brown sugar and black pepper; cook until the sauce reduces slightly and coats the beans (about 1-1/2-2 minutes longer).
- If you want a thick sauce mix a small amount of cornstarch with a small amount of cold water and add in towards the end.
- Add in the almonds or sesame seeds; toss to coat and transfer to a bowl.
