Souvlaki is a Greek specialty made with tender cuts of meat. In this pork kebab recipe, the meat is marinated in a lemony olive oil mixture. Serve with rice pilaf and a Greek salad.

- In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
- Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
- Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

CHICKEN AND SCALLION SKEWERS
A little pre-holiday cleaning has me tossing out stacks of cooking magazines. Rather than tearing out the recipes and creating small stacks to replace the large ones, I'm typing them up and keeping them here for safekeeping. This recipe is inspired by the cuisine of Korea and appeared in a very old issue of Eating Well magazine - a stylized hybrid of Cooking Light and Bon Appettit. Note that the cooking time does not include 6 to 24 hours for marinating the chicken.

Steps:
- Place 12 bamboo skewers in warm water for 30 minutes.
- Mix together all the the ingredients for the marinade in a small bowl.
- Cut the chicken breasts into long strips, about 8 per breast half.
- Trim the scallions into 1 1/2 long pieces.
- Thread the chicken and scallions on the bamboo skewers with the scallion being pierced so that it runs long vertical across the length of the skewer.
- Place kebobs in a 9 by 13 inch baking dish and pour two-thirds of the marinade over the chicken. Cover with foil and place in the icebox for 6 to 24 hours, turning occasionally. (The frequency depends on how long you plan to marinade the meat.).
- To cook, place the kebobs on an indoor or outdoor grill and cook for 2 to 4 minutes per side. Brush the kebobs with reserved marinade while cooking.
- This serves 6 as a main course but works well as an appetizer.

UKRAINIAN PATYCHKY MEAT ON A STICK

- Cut veal and pork into 1-inch cubes and place cubes in a large bowl.
- Chop garlic.
- In a small bowl, mix garlic, water, wine vinegar, salt, and pepper.
- Pour over meat cubes and stir.
- Marinate meat cubes for at least 3 hours, or overnight, to allow flavours to blend.
- Leaving about 2 inches at the bottom of each skewer, arrange pork and veal cubes alternately on wooden skewers.
- Squeeze cubes together.
- Continue to add meat until all the meat is used. You should fill 12 skewers.
- In a shallow bowl, combine breadcrumbs, curry powder, salt, and pepper.
- In a second shallow bowl, beat eggs.
- Dip skewered meat cubes in breadcrumbs.
- Coat with egg, then dip in crumbs again.
- Gently squeeze sticks with hands to make breadcrumbs flat and sticks more rounded.
- In a large skillet, heat about 1 inch of cooking oil.
- Fry skewers of meat cubes, a few at a time, until meat is lightly browned.
- Combine onions and butter and spread in a large shallow baking dish.
- Place meat sticks on top of onions.
- Bake in a 275 degree Fahrenheit oven for about 45 to 60 minutes, or until meat is no longer pink.
MAPLE-CHICKEN SKEWERS

- Heat broiler. Coat broiler pan with non-stick spray. Soak 20 bamboo skewers in warm water for 20 minute Combine maple syrup and barbecue sauce. Set aside.
- Cut bacon in half crosswise and cook in skillet over medium heat about 3 minutes per side, until lightly cooked but still flexible. Place on paper towels and let cool. Cut onion into wedges; separate pieces. Microwave 20 pieces on a plate on igh for 30 seconds.
- Cut chicken into 20 pieces, 1 inch each. Wrap cooked bacon piece around chicken. Thread 1 onion piece onto skewer, then chicken, then pineapple. Repeat for other skewers. Divide maple-barbecue sauce in half. Brush skewered food with half the sauce.
- Broil skewers 4 inches from heat for 4 minutes; remove from oven and turn over. Brush with remaining sauce. Broil 4 more minutes.

- Combine orange and lemon juices, oil, garlic, cumin, paprika, salt and oregano in a resealable plastic food storage bag.
- Add chicken and peppers; seal bag and turn to coat.
- Place bag on a plate on the bottom shelf in refrigerator and marinate for 2 to 8 hours.
- Preheat grill or grill pan.
- Thread chicken and pepper halves onto 8 metal or wooden skewers, using 4 pieces of chicken and 3 pieces of pepper per skewer; coat with cooking spray. (Note: If you're using wooden skewers, soak them in water 30 minutes before use to prevent charring.).
- Grill skewers, turning often, until chicken is no longer pink in the center, about 6 to 8 minutes; serve immediately.
- Leftovers can be refrigerated for up to 3 days. Yields 1 skewer per serving.
KOREAN CHICKEN SKEWERS - DAKKOCHI
These skewers are similar to those sold at the food stalls in Korea. There are two sauces included in this recipe. Each is enough to coat 6 skewers - 12 total. Of course, you can double either sauce and eliminate the other if you'd like. Note - the prep time includes soaking the wooden skewers for 30 minutes.

- Immerse the skewers in water and let soak for 30 minutes.
- To make the spicy gochujang sauce, combine 1/4 cup ketchup, 2 Tbsp gochujang, 2 Tbsp honey, 2 Tbsp dark brown sugar, 1 Tbsp soy sauce, 2 tsp sesame oil and 1/2 tsp minced garlic in a medium bowl. Mix them well. Set it aside until needed.
- To make the sweet soy sauce, combine 3 Tbsp soy sauce, 2 Tbsp honey, 1 tsp minced ginger, 1 tsp minced garlic in a sauce pan and boil it over medium low heat until it starts lightly bubbling. In the meantime, combine the water and cornstarch in a small bowl and whisk it well.
- When the sauce in the sauce pan starts bubbling, pour over the cornstarch mixture. Whisk them well until the sauce is well blended and thickens. (Do not over-thicken as it will be difficult to spread over the chicken later. The sauce should be still slightly runny.).
- Remove from the heat and set it aside until needed.
- Place the chopped chicken pieces into a mixing bowl. Add the rice wine, some salt and pepper. Mix them well. Set it aside while other ingredients are being prepared (about 5 mins).
- Remove bamboo skewers from the water (from step 1) and gently pat them with kitchen paper. Put chicken and green onion pieces onto a skewer in alternating order. Make sure all the meat and green onions are tightly packed onto the skewer.
- Preheat grill or indoor grill pan. Spray some cooking oil over the grill grates . Place the chicken skewers on the grill/grill pan and cook over medium high heat. Turn the skewers after 3 minutes and start brushing your choice of either sauce onto the chicken and green onions. After 2 minutes, reduce heat to medium and turn the skewers over again and brush on the sauce of your choice. Then reduce heat to low. Continue turning the skewers and brushing sauce on them every two minutes until the chicken is fully cooked and nicely charred.
- Serve immediately.
PARTY CHICKEN SKEWERS
This also works well using turkey strips, plan ahead the chicken needs to marinate for 8 hours --- these may be grilled or oven-broiled, they make a great appetizer for a party --- you can make these well in advance and refrigerate, just make certain that the chicken skewers are kept in sealed plastic bags so the wooden skewers will not dry out and make certain to soak the skewers in water for at least 30 minutes, 1 or more hours if you are planning to prepare ahead and refrigerate, this will prevent the skewers from burning while cooking --- servings is only estimated it will depend on how many strips you thread onto each skewer :)

- Add the chicken strips and toss to coat with the marinade.
- Cover and refrigerate for about 8-24 hours, tossing occasionally during the chilling time.
- About 1 hour before threading the chicken soak the wooden bamboo skewers in cold water for at least 30 minutes or more.
- Discard the marinade, then thread the chicken strips onto skewer snake-like.
- Grill or oven-broil for about 4-6 minutes or until just browned and cooked through.
