YAM CASSEROLE
My entire family has always hated yams until I made this dish 15 years ago. Now everyone looks forward to this dish during the holidays. However, I do make it at home during the year, not just during the holidays. I have given this recipe to several people that have requested it, now I'll give it to you.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine yams, melted butter, white sugar, evaporated milk, eggs, nutmeg, cinnamon and vanilla extract. Mix well and transfer to a 9x9 inch casserole dish.
- In a medium bowl cream butter with brown sugar. Stir in walnuts and frosted cereal. Spread on top of yam mixture.
- Bake in preheated oven for 35 minutes.

YUMMY YAM CASSEROLE
I call this the 'recipe with legs' because every time I serve it, the recipe is requested. Even those who dislike yams and sweet potatoes love this tasty dish! This dish can be frozen, but freeze it without the pecan topping. Defrost before baking.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl.
- Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy.
- Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top.
- Bake for 25 minutes in the preheated oven, or until browned and bubbly.

YUMMY SWEET POTATO CASSEROLE
My family begs me to make this creamy baked dish every Thanksgiving and Christmas. What makes it so good is the pecan topping! Try it and I'm sure it will become your new tradition!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
- In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
- In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
- Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

YUMMY YAM CASSEROLE
My boss' wife always makes these for the annual Christmas party. They are to die for. Better than the kind made with marshmallows IMHO. Thanks, Holly! Note: This recipe can be doubled and placed in one large 9x13 dish but the baking thime also needs to be doubled. Steps:
- Preheat oven to 350.
- Whip together "yam" ingredients and pour into a 9x13 glass baking dish.
- Mix "topping" ingredients until it resembles coarse crumbs and drop over top of yam mixture.
- Bake for 30 minutes.
- To freeze: Assemble casserole as directed up to the point of baking. Cover well with foil. Label and freeze.
- To serve: Thaw in fridge, uncover and bake as directed.

- Place yams in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain yams and place in a large bowl; mash. Stir in the egg substitute, brown sugar, salt and cinnamon. , Transfer to a 1-qt. baking dish coated with cooking spray. Cover and bake at 350° for 15 minutes. , Meanwhile, in a saucepan, melt butter. Add pecans and brown sugar; cook and stir until sugar is melted. Stir in cereal until coated. Sprinkle over yam mixture. , Bake, uncovered, 15-20 minutes longer or until a thermometer reads 160° and topping is golden brown.
