Steps:

  • Prepare grill for direct-heat cooking or position broiler so that top of steak on rack in pan will be 4 inches from heat source; heat broiler. Combine barbecue sauce, lime zest and 1 t. lime juice; reserve. Rub both sides of steak with seasoning and salt.
  • Grill or broil steak, turning once, 3-5 minutes per side for medium-rare; sprinkle with remaining 1 t. lime juice and brush with reserved sauce mixture during last minute of cooking. Let stand 5 minutes before slicing. If desired, garnish with lime and parsley and serve with additional barbecue sauce.

Skirt Steak with Bok Choy image

Steps:

  • Put the skirt steak into a 1-gallon resealable plastic bag. Whisk together the garlic, soy sauce, brown sugar, rice wine vinegar, ginger, sesame oil, chili flakes and scallion whites in a small bowl. Pour two-thirds of the marinade over the steak, reserving the remaining marinade. Seal the bag, removing as much air as possible. Set aside and let marinate for at least 10 minutes.
  • Meanwhile, whisk together the mayonnaise and sriracha in another small bowl.
  • Heat 2 tablespoons each of olive oil and butter in a large cast iron skillet over medium-high heat. Remove the steak from the marinade and sear on each side until cooked to the desired temperature, 3 to 4 minutes per side for medium rare. Remove the steak to a cutting board to rest while you cook the vegetables.
  • Add the remaining 1 tablespoon olive oil and 1/2 tablespoon butter to the skillet. Add the bok choy, cut side-down, and sprinkle the mushrooms around the skillet. Allow to brown and cook for 2 to 3 minutes. Flip the bok choy, whisk the reserved marinade to combine and pour into the skillet and let reduce slightly. Remove from the heat.
  • Slice the steak against the grain. Transfer the bok choy to a platter with any sauce that is in the skillet, top with the shiitake mushrooms, arrange the sliced steak along the edges, and garnish with the reserved scallion greens. Serve with the sriracha mayo.

Steps:

  • Combine steak, beer, 1 tablespoon lime juice, 1 teaspoon salt, and 1/4 teaspoon pepper in a resealable plastic bag. Seal; chill 3 hours.
  • Cook onion, garlic, and oil in a small skillet over medium heat until soft and translucent, 5 minutes. Let cool.
  • Prepare a grill for high heat (if using charcoal, prepare two zones of heat, high and medium-high). Grill tomatoes over high heat, turning occasionally, until well charred but still holding their shape, 6-8 minutes.
  • Reduce grill to medium-high heat (or use medium-high zone if using a charcoal grill). Remove steak from marinade and pat dry. Season with salt and pepper and grill until charred, about 3 minutes per side for medium-rare. Transfer to a cutting board and let steak rest 10 minutes.
  • Meanwhile, blend onion and garlic, tomatoes, chipotle, and remaining 3 tablespoons lime juice in a blender until smooth. Add chopped cilantro, season with salt, and pulse until just combined. Transfer salsa to a small bowl.
  • Grill tortillas until soft and beginning to char, about 30 seconds per side. Slice steak against the grain into 1/2" trips. Top each tortilla with a few pieces of steak, then some salsa, cilantro leaves, avocado, and Cotija cheese. Serve with lime wedges for squeezing over.

  • Heat charcoal, preferably natural chunk, until grey ash appears.
  • In a blender, put in oil, soy sauce, scallions, garlic, lime juice, red pepper, cumin, and sugar and puree.
  • In a large heavy duty, zip top bag, put pieces of skirt steak and pour in marinade.
  • Seal bag, removing as much air as possible.
  • Allow steak to marinate for 1 hour in refrigerator.
  • Remove steak from bag and pat dry with paper towels.
  • Using a blow dryer, blow charcoal clean of ash.
  • Once clean of ash lay steaks directly onto hot coals for 1 minute per side.
  • When finished cooking, place meat in double thickness of aluminum foil, wrap, and allow to sit for 15 minutes.
  • Remove meat from foil, reserving foil and juices.
  • Slice thinly across the grain of the meat.
  • Return to foil pouch and toss with juice.
  • Serve with grilled peppers and onions, if desired.

  • Combine vinegar, miso paste, brown sugar, cayenne pepper, and garlic in a small bowl. Stir until smooth.
  • Spread miso mixture generously on both sides of skirt steaks. Sprinkle with black pepper. Allow to rest at room temperature for about 30 minutes.
  • Prepare a charcoal grill for medium-high heat. Place steak on the grill and cook without moving for about 2 minutes. Turn steaks 180 degrees to create cross-hatch grill marks, and cook another 2 minutes.
