2 cups chicken, cooked and diced
1 teaspoon onion, grated
4 ounces Velveeta cheese, grated
1 teaspoon salt
1/2 teaspoon pepper
1 cup celery, chopped
1/2 cup Miracle Whip
1 tablespoon lemon juice

DEVILED EGG DIP

An easy way to make a great dip. I came up with this recipe a few years ago and it was a hit. The bowl gets empty pretty fast!

Deviled Egg Dip image

Steps:

  • Peel and cool hard boiled eggs. Blend in a food processer until smooth. Transfer puree into a bowl.
  • In the bowl, mix in miracle whip, mayo, parsley and paprica. Add salt and pepper to taste. Save half of the parsley and paprica for garnish. Cover with plastic wrap and chill for 30 minutes or until cold.
  • Remove dip from fridge. Garnish with remaining paprica and parsley.
  • Serve with pretzels or wheat thins.

Steps:

  • Heat bacon fat in a frying pan, and add black beans.
  • Simmer until beans are soft, about 10 minutes, and smash some until you get a thickened consistency.
  • Add cream cheese and gorgonzola cheese and mix until well blended and cheeses are melted.
  • Add the garlic cloves and Tabasco sauce or Louisiana hot sauce to taste.
  • Refrigerate. When ready to serve heat in a 350 degree oven or nuke until hot and bubbly.
  • Add sliced green onions and cilantro and serve immediately.
  • Serve with tortilla chips.

Pesto Chicken Spirals image

Steps:

  • Flatten chicken thighs.
  • MAKE PESTO: Microwave oil and garlic together on HIGH 40 seconds; process with basil through pepper in a food processor.
  • Spread about 1 tsp pesto down center of each thigh, leaving a ¼-inch border on short ends.
  • Starting at a short end, roll each thigh up with pesto inside and secure with a toothpick.
  • Arrange rolls ½ inch apart, seam sides down, in a 13 x 9-inch baking dish coated with cooking spray.
  • Bake at 375° until a cooking thermometer registers 170° (about 30 minutes), turning rolls after 15 minutes.
  • IMPORTANT: Cool, transfer to a covered container and refrigerate overnight.
  • Remove toothpicks and cut each roll crosswise into 1/4-inch-thick slices.
