OLD-FASHIONED PORK CAKE

This recipe is one that my Grandma Lewis would make when she had the ingredients on hand -- because the family lived deep in the mountains of West Virginia a quick trip to the store was not feasible especially during the winters months. My grandma was a terrific cook and never measured ingredients (old school of little bit of this, little bit of that) but it didn't matter because whatever she cooked always tasted good and filled you up! This recipe is one of my dad's favorites and I hope you like it, too!

Old-Fashioned Pork Cake image

Steps:

  • Grease and flour 2 bundt pans. Preheat oven to 325 degrees.
  • Put pork and raisins in a large mixing bowl (6qt.+) and pour hot coffee over them; Set aside allowing some time to cool.
  • Sift together all measured dry ingredients; Mix in walnuts.
  • Stir pork mixture carefully in case the coffee is still hot. Slowly begin to add sifted dry ingredients with walnuts and combine together thoroughly.
  • Mix in applesauce and citron.
  • Pour into greased and floured bundt pans. Bake for 1-1/2 to two hours or until done.

1 pint black coffee, strong
1 lb fat pork, fresh ground
1 lb walnuts, chopped
1 lb raisins
1 lb dates, cut up (optional)
1 medium orange, peeled (optional)
1 lb candied fruit (optional)
4 cups brown sugar
7 cups all-purpose flour
1 tablespoon baking soda
1 tablespoon baking powder
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
1 cup applesauce
1 cup citron

This is a sweet meat cake from Gramma Stevens' ziplock recipe bag. It's so unique, it makes you wonder what people were thinking 150 years ago. And... could it possibly contain raisins? Steps:

  • 1. Put pork thru grinder, pour boiling water over it and let stand until lukewarm.
  • 2. Stir in sugar, spices, soda, well beaten egg and molasses.
  • 3. Sift flour and add to fruit and then to pork mix. Stir until well blended.
  • 4. Pour into well greased baking pan and bake 2 hours in a 300 degree oven or until done.
  • 5. Gramma Note: This cake can be eaten as soon as baked and cooled, or it will keep for weeks. Good for outdoors picnics.

1 lb salt pork (all fat)
1 pt boiling water
4 c sugar
1/2 c molasses
1 egg, well beaten
6 c flour, sifted
1 tsp baking soda
1 tsp nutmeg
1 Tbsp cinnamon
1 tsp cloves

Steps:

  • Preheat oven to 350F.
  • Cream butter and sugar.
  • Beat eggs well and add.
  • Sift flour and spices together.
  • Stir baking soda with 1/3 of the milk.
  • Mix with egg/sugar mixture.
  • Add rest of milk, alternating with flour mixture.
  • Pour into a greased 10 inch tube pan.
  • Bake 45-55 mins
  • HINT: If you dont have sour milk, add a tablespoon of vinegar to the milk to sour it.

This is one of my great-grandmas recipes that is really special.I was told to let it age for a day then serve the next day for a richer taste.I put a carmel icing in the recipe but you can use any kind or leave it plain.

Steps:

  • 1. Cream butter and add sugar slowly. Beat till creamy.
  • 2. Add eggs (room temperature) one at a time beating after each egg.
  • 3. Sift flour.Then sift 3 1/2 cups flour again with baking soda and spices..
  • 4. Add flour mixture alternately with milk. Blend all ingredients together well.
  • 5. Mix cake at least 10 minutes.
  • 6. Fold in strawberry jam.
  • 7. Grease and flour cake pans and pour batter in them. Can use 13x9" or bundt cake pan. Bake at 375 degrees for 30-40 minutes till golden brown.
  • 8. CARMEL ICING: mix 1 1/2 cups melted butter and brown sugar. Add 1/2 cup of milk or cream and 2 teaspoons of vanilla. Add enough confectioners sugar to make spreadable consistency.About 1 box.Frost cake while warm.
