Grandma Geldner's Apfel Kuchen (Apple Kuchen) image

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

Steps:

  • Preheat oven to 350 degrees F, then grease & flour a 13"x9" baking dish.
  • In a medium bowl, combine margarine, cake mix & coconut until crumbly.
  • Cover the bottom of prepared baking dish with this mixture, spreading evenly & patting down, building up edges to form a crust.
  • Place apple wedges on top, arranging them evenly.
  • Combine cinnamon & sugar, & sprinkle this mixture over apples.
  • In a small bowl, combine sour cream & egg, then drizzle this mixture on top of cinnamon/sugar mixture.
  • Bake for 35 minutes or until apples are tender & edges are golden.
  • Remove from oven, cool slightly & enjoy!.

  • Arrange apples in a greased 13x9-in. baking dish. Combine 1/2 cup sugar and cinnamon; set aside 1 tablespoon. Steps:

  • Preheat the oven to 325 degrees F.
  • For the apples: Add the lemon juice and 2 cups of water to a large bowl and stir. Add the apple wedges. Set aside.
  • For the batter: Add the cake mix to a large bowl. Whisk together the cider, sour cream and eggs in a separate bowl. Add the wet ingredients to the cake mix and stir until combined.
  • For the streusel: Add the brown sugar, flour and cinnamon sugar to a large bowl. Stir to combine. Using a box grater, shred the chilled butter into the bowl. Use a pastry cutter or fork to mix and toss the mixture until crumbly. Place back in the refrigerator if needed while preparing to bake.
  • To assemble: Spray the bottoms and sides of a 9-inch springform cake pan with cooking spray. Place a circle of parchment paper on the bottom and spray again. Pour half of the cake batter in the pan. Sprinkle the top with half of the streusel mixture, then add half of the apple slices in a circular fanning pattern. Repeat the layers and dust the top with cinnamon sugar.
  • Bake until a wooden skewer inserted in the center of the cake comes out clean, 1 hour 30 minutes to 1 hour 45 minutes. Cool on a rack for 30 minutes before releasing the spring form.
  • For serving: Serve the cake slices with Sunny's Bourbon Whipped Cream.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour two 9 inch round cake pans. Soak the raisins in boiling water while the oven preheats.
  • Cream together 1/2 cup butter or margarine with 1 cup sugar until fluffy. Beat in the eggs one by one, then add the almond extract and milk. Sift together the flour, salt, and baking powder; stir into the creamed butter to form a loose dough.
  • Divide the dough in half and press each half into the bottom of a prepared cake pan, bringing it slightly up the sides. Drain the raisins and scatter them over the dough. Arrange the apple slices in a spiral pattern over the raisins, overlapping slightly. Sprinkle with the remaining 1/2 cup of sugar and drizzle with 1/2 cup of melted butter or margarine.

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Steps:

  • Make the cake: Heat oven to 325 degrees and position a rack in the middle of the oven. Butter and flour a 9-inch cake pan, preferably a springform pan.
  • With an electric mixer, cream the butter and sugar, then add honey and whip for 1 minute, until fluffy. Beat in eggs one at a time, until well incorporated, then whip for 2 minutes. Stir in grated ginger, candied ginger and lemon zest.
  • Whisk together flour, salt and baking powder and add to bowl, mixing briefly to make a stiff batter. Pour batter into prepared pan.
  • With a paring knife, cut slits in each of the apple quarters on the rounded, outer part of the wedge, slicing partway through at 1/8-inch intervals. Arrange apple quarters slit-side-up over the batter. Sprinkle surface with 1 tablespoon sugar.
  • Place cake pan on a baking sheet and put on middle rack of oven. Bake for about 45 minutes, or until an inserted skewer emerges dry. If cake is browning too rapidly, tent with foil until done. Cool on a rack, then carefully unmold.

  • Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.

  • Preheat oven to 350 degrees F

Apple and Blackberry Kuchen image

Steps:

  • For the cake:
  • Pour 2 1/4 cups of the flour in a bowl with the salt, sugar and yeast. In another bowl, beat the eggs and add them, with the vanilla extract, lemon zest and cinnamon, to the lukewarm milk. Stir the liquid ingredients into the dry ingredients to make a medium-soft dough, being prepared to add more flour as necessary. I generally use about 2 1/3 cups in all, but advise you to start off with the smaller amount: just add more as needed. Work in the soft butter and knead by hand for about 10 minutes or half that time by machine. When the dough is ready it will appear smooth and springy: it suddenly seems to plump up into glossy life.
  • Cover with a kitchen towel and leave until doubled in size (1 hour to 1 hour 15 minutes). Or leave to rise slowly in a cold place overnight. Then punch down and press to line a jellyroll pan measuring 13 by 9-inches. You may think it's never going to stretch to fit, but it will, although you may need to let it rest for 10 minutes or so mid-stretch, especially if the dough has had a cold rise. When it's pressed out on the pan, leave it to rest for 15 to 20 minutes and then brush with the egg and cream mixture.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Peel and chop the apple and toss it in a bowl with the blackberries and the zest from the other half lemon. Set the bowl aside for the few minutes it takes to make the crumble topping. Put the flour, ground almonds and cinnamon in a medium-sized bowl, stir to combine, then add the cold, diced butter. Using the tips of your fingers - index and middle stroking the fleshly pads of your clumpy (this is very buttery mixture) oatmeal. Fork in the sugars and sliced almonds.
  • Tumble the fruit over the egg-washed dough and then sprinkle the crumble on top of that. Put in the oven for 15 minutes, then turn down to 350 degrees F and cook for a further 20 minutes or so, until the dough is swelling and golden at its billowing edges and the crumble is set; don't expect it to be crunchy.

Steps:

  • Put 2 1/2 cups of the flour in a bowl with the salt, sugar, and yeast.
  • Beat the eggs and add them, with the vanilla, lemon zest, and nutmeg, to the lukewarm milk.
  • Stir the liquid ingredients into the dry ingredients, to make a medium-soft dough, being prepared to add more flour as necessary.
  • Work in the soft butter and knead by hand for about 10 minutes.
  • When the dough is ready it will appear smoother, and springier.
  • Cover with a tea towel and leave till doubles (1 to 1 1/4 hours), or leave to rise in a cool place overnight.
  • Punch down dough and press in a 9X13 inch pan, if the dough seems like it won't stretch to fit, let it rest for 10 minutes.
  • Once the dough is pressed into the pan, let it rise for an additional 15-20 minutes.
  • Heat the oven to 400°F.
  • Peel and core the apples and chop them finely.
  • When the dough is ready, beat the egg with the cream, grate over a little nutmeg and brush the top of the dough with this mixture.
  • Cover the egg glazed dough with the apples, then mix together the sugars and allspice and sprinkle over.
  • Top with the almonds and put in the oven for 15 minutes.
  • Turn oven down to 350°F and cook for another 15 minutes or so, until the dough is swelling and golden and the edges.
  • Remove from the oven and make a runny icing, spoon and trickle it over the cake.
  • Cool for about 15 minutes and serve warm.
