ONE - TWO - THREE - FOUR CAKE II
This is a very old recipe. It uses basic items found in most any pantry.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round pans.
- Beat butter and 1 cup of sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
- In a separate bowl, beat egg yolks well, then add to butter mixture.
- Sift together flour and baking powder. Add alternately with the milk to the butter-sugar mixture. Beat well. Add vanilla.
- Beat egg whites until stiff but not dry. Add 1 cup sugar to the egg whites. Fold into cake batter.
- Divide evenly into three prepared 9 inch round pans. Bake at 350 degrees F (175 degrees C) for 25 minutes.

HEAVENLY WHITE CAKE
This is an old recipe I have for a white cake, and it tastes very good.

- Measure sifted cake flour, baking powder, and salt; sift together three times.
- In a mixing bowl, beat egg whites until foamy. Add 1/2 cup sugar gradually, and continue beating only until meringue will hold up in soft peaks.
- Beat butter until smooth. Gradually add remaining 1 cup sugar, and cream together until light and fluffy. Add sifted ingredients alternately with milk a small amount at a time, beating after each addition until smooth. Mix in flavorings. Add meringue, and mix thoroughly into batter. Spread batter in a 15 x 10 x 1 inch pan which has been lined on the bottom with parchment paper.
- Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool cake in pan 10 minutes, then remove from pan and transfer to a wire rack to finish cooling. This cake may also be baked in two 9 inch round pans for 30 to 35 minutes, or in three 8 inch round pans for 25 to 30 minutes.

- Preheat oven to 350. Grease and flour two 8 or 9 inch cake pans and set aside. In a large bowl, sift together flour, sugar, baking powder and salt. Add the butter, 2/3 cup of the milk and the vanilla. Beat for about 2 minutes. Add remaining milk and the egg whites. Beat for another 2 minutes. Pour into the pans and bake for 25-30 minutes. Let cool in the pans for 10 minutes and then turn out on a rack to cool completely before frosting. Frosting: Using either a double boiler or a metal bowl placed over a pot of boiling water, combine the egg whites, sugar, cream of tartar and water. Place over boiling water and beat with a mixer until stiff peaks form, usually 7-9 minutes. Scrape the bowl occasionally. Fold in the vanilla. Two tips: Make sure the water is boiling before you start beating and make sure everything is very clean and dry. Using about 1/3 of the frosting, fold in the raisins and dates. Use this as a filling between the 2 layers. Frost the tops and sides of the cake with the remaining frosting.
FOUR EGG YELLOW CAKE
This is our favorite yellow cake recipe. I usually don't get to put any icing on before it is gone.

- Cream together shortening and sugar. Beat in eggs and vanilla.
- In a separate bowl, combine flour, baking powder, and salt. Add to creamed mixture alternately with milk. Mix well. Pour batter into prepared pan.
- Bake for 45 minutes, or until cake tests done. Cool.

Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition., Spread evenly into two greased and floured 9-in. round baking pans. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Spread frosting between layers and over the top and sides of cake.
