ALIEN HATCHLING CAKES
Giving an actual pet as a gift on someone's birthday is extremely risky... this next recipe is not. Who wouldn't love this adorable little group? I used rolled-out modeling chocolate for the feathers, eyes and wings, and their chubby little tummies are filled with strawberry cake and fresh cream cheese frosting! The best part is you don't have to feed them... in fact, they'll feed you! Baking side note: I've recently discovered that it's best to not use salt in anything with strawberries... The berries tend to amplify the salt and I'm having better results by just omitting it all together.

Steps:
- For the Strawberry Cake:.
- Heat oven to 350°F Purée frozen strawberries and mix in a glass bowl with buttermilk, vanilla and eggs. Mix cake flour and baking powder in a separate bowl. Cream butter in a stand mixer, add jello powder, sugar and beat until light and fully incorporated. Butter and flour a large muffin baking pan and one six-slot cupcake tin.
- Alternate mixing the wet and dry ingredients into the butter batter until everything is fully incorporated. Pour into trays and bake large tin about 35-40 minutes and small tin about 25 minutes until a toothpick comes out clean. Wait ten minutes before removing from tins.
- For the Cream Cheese Frosting:.
- Cream butter and cream cheese together in stand mixer. Once fluffy, add icing sugar one cup at a time and beat until airy. Add vanilla and salt and use to fill and coat your little aliens. Once they are the shape you like, roll them in pink coconut until fully coated.
- For the Modeling Chocolate Accents:.
- To make the ears, feathers and wings, you will also need a small rolling pin, small leaf-shaped cookie cutters, modeling tools, powder pains and vodka to paint the eyes.
- Warm corn syrup separately in the microwave. Melt down chocolate or candy melts, and once in a liquid state, remove from heat and mix in warm corn syrup. Mix just until it is the texture of soft serve ice cream. Wrap tightly in a plastic wrap and allow to set for 6-8 hours.
- When ready to use, break off a selected piece and manipulate in your hands until it is soft and flexible again. If it's too soft, you can always fold in a little powdered sugar to help it set up a bit more. Once you have a flexible dough you can roll it out.
- Roll it out thin (1/8 inch) and use the cutters and tools to create all the feathers and shapes. To adhere the feathers, eyes, and extras, whip up a bit of pink-tinted buttercream (1 stick of butter, 1 1/2 cups powdered sugar and a drop of red food color.) I also used this to build up the folds around the eyes and the feet.

ROTH PRASAD
Prasad is a Hindu term for any offering (flowers, drinks, food etc) made to God. Roth is extremely popular here in South africa, especially for Lord Sri Hanuman. Here in SA, we like our Roth crisp on the outside and soft on the inside. Use only pure cows ghee, no substitiutes. Leftover ghee can be filtered and reused as the quality is not affected by heat.

- Divide dough into ten balls and flatten into discs, about 3 mm thick. You may have to use a rolling pin for this.

Steps:
- Heat the oven to 190C/170C fan/gas 5. Butter a 25 x 20cm baking tin, and line the base with baking parchment. Stack a sheet of baking parchment over a sheet of foil, then fold in half so the parchment is facing out. Use this to divide the tin into three sections crosswise, each about 8cm wide.
- Melt the butter, remove from the heat and set aside. Put the sugar and eggs in a large heatproof bowl over a pan of just simmering water, making sure the bottom of the bowl doesn't touch the water. Beat using an electric whisk until really thick and pale, about 4-5 mins.
- Add a fifth of the mixture to the melted butter and mix to combine. Pour the butter mixture into the egg mixture, and carefully fold in along with the flour. Divide the mixture between three bowls. Leave one bowl of batter plain, then fold a drop each of pink food colouring and raspberry extract into the second bowl, and a drop each of yellow food colouring and lemon extract into the third bowl.
- Carefully pour one of the batters into each of the three sections in the prepared tin. Bake for 12-15 mins until cooked through, or a skewer inserted into the middle of the cakes comes out clean. Leave to cool slightly in the tin, then carefully transfer the three cakes to a wire rack and leave to cool completely.
- To make the buttercream, beat the butter, sugar, vanilla and milk together for 5 mins with an electric whisk until pale and creamy. To assemble the cake, put the plain sponge on a board and spread with half the buttercream. Top with the raspberry sponge, then spread with the remaining buttercream and top with the lemon sponge. Trim the sides so they're straight, even and neat.
- To make the fondant icing, sift the sugar into a bowl and mix with 1½-3 tbsp water until you have a thick, droppable icing. Transfer a quarter of the icing to a second bowl, and mix in a drop of pink food colouring. Transfer the pink icing to a piping bag.
- Spread the plain fondant icing over the top of the lemon sponge, making sure it doesn't drip down the sides. Pipe thin lines of pink icing on top across the width of the cake, space apart. Drag a cocktail stick through the lines lengthways to create a marbled effect. Leave to set slightly, then slice the cake into six even rectangles.

Steps:
- Make the alien eggs: Separate the chocolate sandwich cookies and filling into 2 separate bowls. Reserve the filling for the alien egg shell.
- Add the chocolate sandwich cookies to a food processor and pulse until finely crushed.
- Transfer the cookie crumbs to a medium bowl. Add the cream cheese, powdered sugar, and vanilla and mix with an electric hand mixer until the mixture is coarse and sandy. Set the mixer aside and use your hands to gather the mixture into a rough ball.
- Divide the dough into 12 2-tablespoon portions. Use your hands to form each portion into an egg shape.
- Use the thick end of a chopstick to carefully poke a hole vertically through the top of the egg about ¾ of the way down, being careful not to poke through the bottom. Move the chopstick around slightly to create a larger space to hold the ooze. Stand upright on a tray.
- Make the ooze: In a small bowl, mix together the sweetened condensed milk and purple food coloring until the color is even. Transfer to a small squirt bottle or a piping bag fitted with a small round tip.
- Fill the center of each alien egg about ¼ inch (6 ml) from the top with the purple ooze. Use your fingers to carefully pinch the tops of the eggs closed. Transfer to the refrigerator for about 30 minutes to set.
- Meanwhile, make the alien egg shell: Divide the reserved sandwich cookie filling between 2 medium bowls. Add 2 tablespoons of sweetened condensed milk to each bowl. Microwave on medium power for 30 second intervals.
- Add the light green food coloring to one bowl the dark green food coloring to the other. Stir until the colors are evenly incorporated. Let cool for 5 minutes.
- Combine 1 teaspoon of each color shell in your hands. Roll between your hands until marbled. Place the mixture on top of an egg and smooth down the sides to coat. Repeat with the remaining eggs. Refrigerate for about 30 minutes to set.
- Make the black goo: In a small bowl, mix together the sweetened condensed milk and black food coloring until the color is even.
- To serve, spread the crushed chocolate cookies on a platter. Arrange the alien eggs on top and drizzle with the black goo. Served immediately.
- Enjoy!

GHOSTS IN THE GRAVEYARD
This recipe was posted in response to a request for Halloween desserts. My birthday is on Halloween, and my mom made this adorable dessert many times for my birthday parties as a child. Feel free to be as elaborate as you like with the graveyard "decorations". There's lots of fun candy out there to experiment with. I hope you and your family enjoy this as much as I did! Cook time is chill time.

Steps:
- Crush the oreo cookies in a plastic bag using a rolling pin, or in a food processor.
- Pour milk into large bowl.
- Add pudding mixes.
- Beat with wire whisk 2 minutes or until well blended.
- Let pudding stand 5 minutes.
- Gently stir in 1/2 each of the whipped topping and crushed cookies.
- Spoon into 13x9-inch dish; sprinkle with remaining crushed cookies to be the"dirt" of the graveyard.
- Refrigerate for at least an hour or until ready to serve.
- Decorate the remaining cookies with assorted icings to resemble tombstones,"RIP" and"BOO" are nice sayings; stand up cookies in top of dessert like graves.
- Add candies and plastic"scary" creatures, if using.
- Drop remaining whipped topping by spoonfuls onto dessert to resemble ghosts.
- What works best is to make the cool-whip"ghosts" ahead on a cookie sheet and store them in the freezer until ready to use.
- That way they don't flop over.
- Two or three small, round dollups of cool-whip (like a snowman) make nice looking ghosts.
- You should be able to make 2 or 3 ghosts.
- Remove"ghosts" from the freezer and give them"eyes" and a"mouth" using the brown decorating icing.
- Place"ghosts" in the graveyard.
- Small plastic spiders, cobwebs, or mini monsters are a nice addition too.
- To serve, just scoop out into bowls.
- Store leftover dessert in refrigerator.

SOUL CAKES
From a request here is a post on a traditional Halloween recipe. From Texarkana Pagan and Witches group on MSN originally. Soul cakes were the original trick-or-treat goody. Irish peasants would go door-to door on All Hallows Eve begging homeowners for food to celebrate the occasion. Soul cakes were given to them. This ensured the homeowner would be free from a curse or prank; instead, the receivers would offer prayers for them that would help them get into heaven.
