Breakfast Apple Bran Loaf image

Steps:

  • Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
  • Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
  • While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
  • Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
  • Slice with a serrated knife and serve with butter on the side.
  • Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.

  • 1. Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.
  • 2. Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.
  • 3. Add egg and 3/4 cup sugar, mixing well with a large spoon.
  • 4. Stir in flour, baking powder, and cinnamon until well-blended.
  • 5. Mix in the chopped walnuts, if desired.
  • 6. Spread into prepared loaf pan.
  • 7. FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.
  • 8. Gently press topping and walnut halves into the batter.
  • 9. Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...

  • In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture. Gradually add enough flour to form a soft dough. Knead on a floured surface until smooth and elastic, about 10 minutes. Place dough in a greased bowl, turning once to grease top.   • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch loaf pan.
  • Bring raisins and water to a boil in a small saucepan, reduce heat to medium, and boil 5 minutes; set aside to cool.
  • Mix rolled oats, bran cereal, whole wheat flour, sugar, and salt in a bowl. Mix milk with lemon juice in a small bowl and let stand 1 or 2 minutes to sour.   • Mix 1 ½ cups of Raisin Brand, Milk, 2 tablespoons of the Margarine in bowl.
