APPLE STREUSEL CAKE

This is a traditional German dessert given to me by my German friend Nicola. It's some work, but absolutely delicious and worth it! The streusel amounts are approximate as you have to mix it together with your hands until you reach the perfect crumbly texture that make it streusel.

Steps:

  • Mix ingredients for the dough in a large mixing bowl until completely mixed.
  • Spread out dough on a lightly oiled 13x9 inch baking dish. Flatten the dough in the pan until it reaches all the corners and equally distributed.
  • Place sliced apples on top in 2 to 3 rows slightly overlapping each other.
  • Sprinkle cinnamon, ground cloves, and ground nutmeg on top.
  • Sprinkle sliced almonds on top.
  • Preheat oven to 350°F or 180°C.
  • Make the streusel: in a separate bowl mix butter, flour, and sugar together with your hands until it forms small crumbles. You may need to add more flour to the mixture until you reach the desired crumbles.
  • Sprinkle streusel (butter, flour, and sugar crumbles) on top.
  • Bake for about 1 hour.

I tinkered with one of my favorite coffee cake recipes, and came up with this apple cake! It's delicious, hot or cold, and smells so good while it's baking! Can be served with whipped cream, but it's moist enough to serve by itself.

Steps:

  • Preheat oven to 350F; Grease a 9" x 13" pan.
  • Slice the apples and set aside.
  • To make the streusel topping, combine 1/4 cup flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and chopped walnuts.
  • Cut in the butter until it resembles coarse crumbs; set aside.
  • In a large bowl, combine 2 cups flour, 1 cup brown sugar, 1 teaspoon ground cinnamon, baking powder, and salt.
  • Cut in the butter until it resembles coarse crumbs.
  • Add the milk, vanilla extract and egg, mixing until just combined.
  • Stir in half the apple slices by hand, and spread batter into prepared pan.
  • Top with remaining apple slices, then sprinkle the streusel topping over the apples.

  • Store any leftovers in the refrigerator.

Steps:

  • Sift flour and measure then sift together with the other dry ingredients. Beat the egg, then add the milk and melted shortening. Pour the wet into the dry then add the raw apples and mix well. Pour into a well greased 8-inch square pan. Mix together the streusel ingredients and sprinkle over the top of the batter. Bake at 400 about 25 to 30 minutes or until a toothpick inserted comes out clean. Serve the coffee cake with vanilla ice cream.

  • Butter the cake pan. Set aside.
  • Make the topping: In a small bowl, stir together the brown sugar, flour, and cinnamon. Sprinkle the 3 tablespoons of butter cubes over the mixture and use your fingertips to work it in to form a crumbly topping. Chill in the refrigerator while you prepare the cake.
  • Preheat the oven to 350 degrees F. Make the cake: In a small pan, melt the butter over medium heat until it begins to turn a medium nut brown, 6 to 8 minutes. Remove from the heat and set aside to cool slightly. In a large bowl, whisk together the flour, sugars, baking powder, baking soda, salt, and spices. In a medium bowl, beat the egg and egg yolk to blend. Whisk in the butter and buttermilk, then pour the liquid mixture into the flour mixture and stir just to combine.   • Grease a 9 or 10-inch bundt pan.
  • Streusel: Combine brown sugar, almonds, flour and cinnamon.
  • Stir in melted butter; set aside.

Caramelised apple cake with streusel topping image

Steps:

  • Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.
  • While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.
  • Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.
  • Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt cake pan.
  • To make streusel: In a medium bowl, mix brown sugar, 3/4 cup flour, and cinnamon. Cut in the butter with a fork until crumbly. Stir in walnuts.
  • In a medium bowl, stir together 3 1/4 cups flour, baking powder, and baking soda. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each. Then stir in the vanilla and yogurt. Gently stir in the flour mixture just until blended.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon. Once the cake mix is in the pan, poke into it thick slices from the 4 peeled and cored small eating apples (Cox's are ideal). Then bake for about 30 mins (half way through baking add the streusel mix on top of one of the cakes, see next step below) until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • Meanwhile, roughly rub together the light muscovado sugar, plain flour and butter. Mix in the roughly chopped blanched hazelnuts. Half-way through baking, sprinkle the streusel mix on top of one of the cakes.
  • To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract if you're using it. Spread the butter cream over the bottom of the sponge that doesn't have the streusel on top and sandwich the two halves of the cake. Keep in an airtight container and eat within 2 days.

Steps:

  • Set oven to 350 degrees.
  • For the crust: In a food processor, mix together flour, icing sugar and ginger.
  • Using on/off motion, cut in butter until dough starts to come together in clumps.
  • Using hands, press mixture evenly into bottom and up sides of a 10-inch springform pan.
  • Refrigerate for 1 hour.
  • Using a fork, prick bottom all over.
  • Bake in oven for about 20 minutes, or until golden brown.
  • Let cool on rack.
  • For filling: In bowl, beat together cream cheese and sugar until fluffy.
  • Beat in sour cream and vanilla.
  • Beat in eggs 1 at a time, until well combined.
  • Pour into cooled crust.
  • Bake in 300 degree oven for 45 minutes, or until center is just slightly wobbly and indented.
  • Transfer to rack.
  • For topping: Meanwhile, in a small bowl, mix together sugar, rolled oats, flour, 3 tbsp of the butter, and cinnamon until crumbly; set aside.
  • In a large skillet, melt remaining butter over medium-high heat; cook apples, turning once, for about 5 minutes or until golden brown, and slightly softened.
  • Arrange apples and any pan juices decoratively over cake.
  • Sprinkle with rolled oats mixture.
  • Bake in 350 degree oven for 10-15 minutes, or until golden brown.
  • Transfer cake to rack; let cool to room temperature.
