APPLE SWISS CHICKEN

MY MOTHER and I both like to experiment with recipes and created this one 43 years ago. It has come to the rescue for many impromptu occasions when I've had to adjust the serving sizes to unexpected numbers. Apple Swiss Chicken image

Steps:

  • Flatten chicken breasts to 1/4-in. thickness; rub with rosemary. Top each with a ham slice and a few apple slices; roll up tightly. Secure with toothpicks. Place in a greased 1-qt. baking dish. Drizzle with oil. , Bake, uncovered, at 350° for 20 minutes. Top with cheese and remaining apple slices; drizzle with apple juice. Sprinkle with paprika. Bake 10-15 minutes longer or until chicken juices run clear and cheese is melted. Discard toothpicks.

Steps:

  • Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

This is a wonderful recipe. This was given to our family years ago by a good friend through the Boy Scouts. My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. My mother, who does not eat chicken, loves the topping of this dish.

Steps:

  • Preheat oven to 350 degrees F(175 degrees C).
  • In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.

  • Sprinkle chicken with thyme, salt and pepper.
  • In large frypan, heat half of the oil over medium high heat; brown chicken all over.
  • Transfer to plate.
  • Add remaining oil to frypan.
  • Cook apples and onion, stirring occasionsally, until golden, about 5 minutes.
  • Add apple cider, bring to boil, stirring and scraping up brown bits from pan.
  • Return chicken to frypan.

  • Dust chicken breasts with the seasoned flour.
  • Heat the butter in frying pan; add crushed garlic and chicken; saute gently until chicken is lightly golden brown.
  • Add wine; bring to the boil.
  • Reduce heat; simmer covered 20 minutes or until chicken is tender; remove chicken from the pan.
  • Trim ham and cheese to approximately same size as chicken.
  • Put a slice of ham on each chicken fillet, then top with cheese.
  • Put on a heatproof serving dish.
  • Cook in a moderate oven, uncovered, for 10 minutes or until the cheese has melted.
  • While chicken is in oven, bring liquid to the boil; boil uncovered until approximately a half a cup of liquid remains in pan.

  • Season with salt and pepper.
  • Pour sauce over chicken.
