SPICY BROWN SUGAR BACON
Inspired by the millionaire's bacon at the restaurant Sweet Maple, these sweet, spicy, caramelized strips are perfect for a special breakfast or brunch gathering.

Steps:
- Preheat the oven to 300 degrees F.
- Cut bacon lengthwise into nine 1/4- to 1/2-inch-thick slices.
- Line a baking sheet with foil and place a cooling rack into the baking sheet. Coat the cooling rack with cooking spray.
- Whisk together the sugar, cayenne, paprika, 2 teaspoons pepper and 1/2 teaspoon salt in a pie dish. Pour 1/2 cup of the maple syrup into a small bowl.
- Brush both sides of each slice of bacon with maple syrup. Press the bacon, one slice at a time, into the brown sugar mixture to coat. Arrange on the greased wire rack. Sprinkle the bacon with the leftover brown sugar mixture.
- Bake, rotating halfway through, until the bacon is cooked and the sugar is dark and caramelized, about 1 hour 30 minutes.
- Transfer the bacon to a parchment-lined baking sheet. Let cool completely. (Bacon can be stored in an airtight container at room temperature for up to 3 days.)
- Meanwhile, whisk together the red pepper flakes and remaining 1/4 cup maple syrup in a small bowl. Drizzle the bacon with the red pepper-maple syrup or serve on the side for dipping.
BROWN SUGAR BACON
Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.

- Line a cookie sheet with parchment paper and preheat oven to 425.
- Lay bacon on paper and sprinkle with sugar.
- Bake 10 minutes then drain fat from pan (carefully!).

BACON HASH BROWN CASSEROLE
I got this recipe from one of those community cookbooks that my mother-in-law gave me. I modified it slightly to suit our personal tastes. I hadn't made it for a long time but made it this Christmas Eve to serve with cabbage rolls - it was a HUGE hit. So, I thought I would share. There are several hash brown casseroles already posted but none with bacon.

- Thaw hash browns for 30 minutes.
- While hash browns are thawing, prepare the bacon: Using clean scissors, cut the bacon into thin strips horizontally. Fry until crispy or desired doneness. (The scissor method saves the hassle of trying to crumble the bacon after it is cooked.).
- In a large bowl, mix together soup & sour cream & salt and pepper.
- Add melted margarine & mix well.
- Add the cheese & bacon and then the hash browns. Continue mixing until well combined.
- Spread mixture into 9 X 13 pan, lightly coated with cooking spray.
- Bake for 1 hour at 375 degrees.

BAKED BACON-WRAPPED BROWN SUGAR SMOKIES
I've seen other recipes for these little indulgent treats, but they cook them in a crockpot and I prefer to bake ours. Baking them in the oven allows the bacon to crisp, the liquids to be released from the Smokies, and the brown sugar to caramelize on them deliciously. It also allows to you control the fat content of them a bit more easily, as most of the bacon drippings will remain on the sheet pan after cooking. We usually make them during the holidays, but they're good for all year 'round, of course. So easy to make!

- Preheat oven to 350 degrees F.
- Open the packages of bacon and cut the whole slab into thirds across the bacon pieces. I usually cut them straight out of the refrigerator while they're cold, then allow them to warm a bit before wrapping the Smokies - the bacon is more pliable when not very cold, and makes it easier to work with awkwardly-shaped pieces.
- To make assembly even easier, line up pieces of bacon on your cutting board or a clean counter. Wrap each Lit'l Smokie in a 1/3-cut piece of bacon, then secure with a toothpick.
- Lay wrapped Smokies on a sheet pan. Tilting the toothpick downward makes lining them up a bit easier. (If you are making a double or triple batch with a Costco-sized 3-pound package of Smokies, continue wrapping until you run of room on your sheet pan, and then - just to make the overall assembly easier - can continue wrapping until you run out of the Smokies and simply put them in a bowl until you can lay them out on another sheet pan later or when your first one is out of the oven. If you run out of bacon before Smokies, you can cut some strips of bacon lengthwise to make additional slices so that you'll have enough.).
- Sprinkle about 1/4 teaspoon of brown sugar on each Smokie - I simply sprinkle by hand.
- Bake in preheated 350 degree F oven for 45 minutes.
- Using tongs, transfer the treats to a platter or plate, arrange attractively, put them out for your guests, and stand back before you get trampled in the crowd's rush to get at them. :).
- Note: I usually make triple batches of these at a time, using the 3-pound Smokies packages from Costco and three packages of bacon. Although best if served immediately, I bake them all up, then freeze them and thaw and reheat in the oven (or even the microwave) to serve. The bacon and brown sugar doesn't stay as crispy that way, but since most parties will have a varying number of attendees we find it's easier to make large batches during the holidays. Before reheating, you can sprinkle a bit more brown sugar over them to make up for any that fell off. ;).
- Optional: before putting the brown sugar over, you can also sprinkle the Smokies with a small amount of cinnamon sugar, for even more flavor!
GINA'S BROWN SUGAR BACON

- Mix brown sugar, cayenne, and black pepper together in a medium bowl. Add bacon and toss.
- Line a baking sheet with a wire rack and lay bacon on the rack. Pat any remaining spice mixture on the bacon. Put the baking sheet on the top rack of the oven and bake until crisp, about 15 minutes. Remove from the oven to a serving dish and let cool slightly before serving.

- Preheat the oven to 375 degrees F. Stir together the sriracha and brown sugar in a medium bowl; add the bacon pieces and toss to coat. Set aside.
- Line a large rimmed baking sheet with aluminum foil; place a wire rack over the foil. Spray the rack liberally with cooking spray. Place the bacon pieces in a single layer on the rack.
- Bake until the bacon is almost crisp, 15 to 20 minutes. Sprinkle the bacon with the toasted and black sesame seeds and bake an additional 5 minutes. Cool for 5 to 8 minutes, moving the bacon pieces slightly on the rack every 2 minutes to prevent sticking. (The bacon will crisp more as it cools.)

- Preheat oven to 350 degrees. On a foil lined baking sheet arrange the eight strips of bacon in a single layer. Squeeze a thin ribbon of Sriracha down the center of each strip of bacon. Use a pastry brush to spread and coat the entire top surface of the bacon with the hot sauce.
- Sprinkle the top of each piece of bacon with a generous portion of brown sugar (don't skimp). Place in the oven and cook to your desired bacon doneness, about 20 to 25 minutes. The crispier, the better. Place on paper napkins to drain.
SLOW ROASTED SRIRACHA PORK AND BACON BURGER
This is a slightly modified version of a Donna Hay recipe. The original adds thinly sliced fresh pineapple to the burger. Still a yummy burger. You will probably have left over pork.

- Preheat oven to 180degC. Heat 1 tablespoon of oil in a large heavy-based oven-proof saucepan, over high heat. Cook the pork for 10 minutes on each side or until browned. Remove and set aside.
- Reduce heat to medium. Add the sriracha, vinegar, sugar and water to the saucepan and stir to combine. Bring to the boil. Return the pork, cover with a lid, place in the oven and cook for 1.5hours. Remove from the oven, turn the pork over, cover and return to the oven for another 1.5hours or until tender.
- Carefully remove the pork and place on an oven tray. Cover and refrigerate for 2 hours or until completely cool.
- Return the saucepan to medium heat and bring the sriracha mixture to the boil. Cook for 8-10 minutes or until thickened. Set aside to cool.
- While the sauce is cooling slice the pork into 8 x 1.5cm thick slices. Heat 1tsp of oil in a large non-stick frying pan over high heat. Cook the bacon, turning, for 4-5minutes or until brown and crispy. Set aside and keep warm.
- Using paper towel wipe the pan clean. Heat the remaining oil over high heat. Cook the pork slices for 2-3 minutes on each side or until charred and warmed through.
- Spread the base of the bun halves with mayonnaise and top with the lettuce, pork, sriracha sauce and bacon. Top with remaining bun halves to serve.
