Baked Acorn Squash image

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a baking sheet and a baking dish.
  • Halve the squash lengthwise and clean.
  • Transfer the squash, cut side down, to the baking sheet, and bake the squash until it is tender, about 45 minutes.
  • Don't turn off the oven.
  • While the squash cooks, melt the butter, and stir in the remaining ingredients.
  • Keep the mixture warm until it is needed.
  • Arrange the squash, cut sides up, in the baking dish.
  • Spoon the butter and seasonings equally over the sections.
  • Bake the squash another 15 minutes, until it is very soft.
  • Serve the squash hot.

Egg Baked in Acorn Squash image

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Thoroughly wash and dry the acorn squash. Use a sharp knife to make a few slits in the squash. Microwave for 2 minutes, then let stand until cool to the touch. Slice off the stem and bottom of the squash. Cut the squash into 4 slices, each about 1/2 to 3/4 inch thick. Remove the seeds with a spoon, creating a hole in each slice (you may need to scoop out a bit of the squash to create the hole). Put the squash slices on the prepared baking sheet.
  • In a small dish, mix the salt, chili powder and pepper. Use a pastry brush to brush both sides of the squash slices with oil, then sprinkle with the salt mixture (reserve a small amount of seasoning for the eggs). Bake for 25 minutes.
  • Remove the squash from the oven and crack an egg into the hole of each slice. Sprinkle with the reserved salt mixture. Return to the oven and bake until the whites are set and the yolks are the desired doneness, about 10 minutes. Serve sprinkled with queso fresco, cilantro and hot sauce if desired.

  • Preheat the oven to 350 degrees F.

  • Preheat oven to 400 degrees Fahrenheit.
  • Cut squash in half and remove all seeds and strings. (Scrape the inside of the squash with the edge of a spoon).

Steps:

  • I like to buy the squash a month or two ahead of time to let it ripen, so that the squash turns yellow all the way around, not just on the bottom. That is when they are ripe. But if you didn't, don't let it stop you from making this recipe !
  • Cut squash in 1/2 with the grooves.
  • Remove the pulp with the seeds, and cut thin slice off back half, so the half lays steady-flat with out tipping, but try do not cut through the center.
  • Place squash in greased oven proof pan.
  • Place butter around edges of squash, and some in center, of each half.
  • You will use 1 tablespoon for each half, more or less. This depends on how buttery you want it.
  • Sprinkle with cinnamon, salt and pepper to taste, and then place bacon around edges of squash.
  • Cover entire dish with foil, bake at 350 degrees, 45 minutes, or until done.
  • To test for doneness, be careful when removing foil,steam will come out, fork test squash for tenderness, when done it will be soft all the way through, to skin.

Baked Stuffed Acorn Squash image

Steps:

  • Heat oven to 375 degrees. Place squash on a baking sheet and bake 20 minutes, until soft enough to easily cut in half. Wait until cool enough to handle (about 15 minutes), then cut in half (stem to tip) and scoop out seeds and membranes.
  • Meanwhile, heat 2 tablespoons of olive oil over medium heat in a large skillet and add onion. Cook, stirring often, until it begins to soften, about 3 minutes. Add red pepper and a generous pinch of salt and cook, stirring, until tender, about 5 minutes. Add tomatoes and tomato paste and cook, stirring often, until tomatoes have cooked down slightly, about 5 minutes. Add honey, maple syrup or pomegranate molasses, vinegar, salt and cayenne, and bring to a simmer. Simmer 8 to 10 minutes, until thick and fragrant. Taste and adjust seasonings. Fill with bean mixture. Mix together bread crumbs, Gruyère and remaining olive oil and sprinkle over the filling. Brush exposed edges of squash with oil.
