BANANA-NOG CAKE
Using two of our family's favorites, bananas and eggnog, I came up with this yummy cake! Very moist and flavorful!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.
- Mix flour, baking soda, and salt together in a large bowl. Beat margarine and white sugar together in a separate bowl until light and fluffy. Beat in eggs, one at a time, until fully incorporated; stir in 2 teaspoons vanilla extract. Stir butter mixture into flour mixture, alternating with eggnog, until well combined. Fold in bananas. Pour batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour. Remove from oven and cool on a wire rack, about 1 hour.
- Beat butter and cream cheese together in a bowl until creamy and smooth; beat in 1 teaspoon vanilla extract. Add confectioners' sugar; beat on medium-low speed with an electric hand mixer until combined. Spread frosting onto cooled cake.

EGGNOG SMOOTHIE
I LOVE THIS. Okay, I thought this up a few nights ago when I wanted a banana smoothie but didn't have any milk in the fridge. I used regular (not low fat) egg nog from the store since it's what I had, but I'm sure the light kind would be just as good. I know fruit smoothies are usually a little healthier than this, but I think its perfect for brunch during the holidays! (Tip: Peel and break the bananas up before freezing them) Also, the store bought variety of egg nog keeps you from having to spice it yourself.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas, eggnog and vanilla. In another bowl, whisk flour, baking powder, 1/4 teaspoon nutmeg, salt and baking soda; gradually beat into banana mixture., Transfer to a greased 9x5-in. loaf pan; sprinkle with remaining nutmeg. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

- In a large heavy saucepan, combine 1-1/2 cups milk, 1-1/2 cups cream, egg yolks and sugar. Cook and stir over medium-low heat until mixture reaches 160° and is thick enough to coat the back of a metal spoon., Place bananas in a food processor; cover and process until blended. Pour milk mixture into a pitcher; stir in the banana puree, rum, creme de cacao, vanilla, and remaining milk and cream. Cover and refrigerate for at least 3 hours before serving., Pour into chilled glasses. Garnish with whipped cream and sprinkle with cocoa if desired.

COOKED EGGNOG
I got this recipe from my favorite literature teacher many, many moons ago, even before the concerns about raw egg yolks. There were so few people in the class, just enough to keep from being cancelled, that we'd usually meet at her home and drink tea and someone would bring cookies. During the holidays she made this for us. I've made eggnog from this recipe for years, especially since we shouldn't use raw eggs.

- In a large saucepan, mix the eggs, sugar, and salt, if used.
- Stir in 2 cups milk.
- Cook, stirring constantly, until thickened and mixture coats a metal spoon (will read 160°F on a candy thermometer).
- Remove from heat and add 2 cups milk and extract.
- Chill several hours or overnight.
- Whirl in blender before serving.
- Add rum or brandy as desired, top with whipped cream and ground nutmeg.
