SIMPLE BANANA COFFEE CAKE
This is a no-frills cake that tastes great with morning beverages or as a snack. It's good for using up those overripe bananas that you hate to throw away.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.
- Sift flour, baking soda, and salt together in another bowl. Stir flour mixture into banana mixture until batter is evenly blended. Pour batter into prepared baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square baking dish.
- Beat superfine sugar and butter in a bowl with an electric mixer until smooth. Add eggs one at a time, beating until each egg is fully incorporated before adding the next. Mix baking soda into sour cream in another bowl and stir into butter mixture until combined.
- Stir bananas into butter mixture; add cake flour and baking powder and mix well. Stir in vanilla extract. Pour banana cake batter into prepared baking dish.
- Mix pecans, brown sugar, and cinnamon in a bowl; sprinkle over cake batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

- In a small bowl, cream butter and 6 tablespoons sugar. Beat in egg and vanilla. Stir in banana and sour cream. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture. Combine the walnuts, cinnamon and remaining sugar., Spoon half of batter into a greased 6-cup fluted tube pan. Sprinkle with nut mixture; top with remaining batter. Bake at 350° for 32-38 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.

BANANA COFFEE CAKE DIAMOND

- Preheat oven to 350°F. and grease and flour a 10-inch (3-quart) bundt pan, knocking out excess flour.
- Into a large bowl sift together flour, cocoa powder, baking soda, and salt. In a small bowl stir together bananas and sour cream. In another large bowl with an electric mixer beat together butter and sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition. - Preheat oven to 325°.
- Grease a 3 quart Bundt pan.
- Puree bananas (1 cup).
- Combine banana, cake mix, pudding, oil, eggs and vanilla extract in large mixing bowl.
- Mix well, beat on medium speed 8 minutes, scraping sides of bowl occasionally.
- Mix almonds, brown sugar, cinnamon and nutmeg; pour one-half cake batter into pan.
- Sprinkle with sugar mixture, cover with remaining batter.
- Stick a knife in the batter, swirl in figure 8 patterns through the layers (Be careful, don't over mix layers).
- Bake 60-65 minutes. Cool in pan on rack 10 minutes, then invert on rack to cool completely.
- Dust with powdered sugar.
- You may garnish cake with sliced bananas if desired.

- Cake:Preheat oven to 350°.
- Butter a 12 cup tube pan and set aside.
- Sift flour, baking powder, baking soda, salt, cinnamon and nutmeg; set aside.
- Beat butter until light.
- Slowly beat in sugar and beat until it is light and fluffy, about 5 minutes.
- At low speed, beat in eggs, 2 at a time, just until blended.
- Beat in the flour mixture and banana mixture alternately, beginning and ending with flour.
- Beat just until blended.
- Stir in coconut and nuts by hand, spread in pan smoothing top.
- Bake until cake is golden brown and begins to pull away from sides of pan, about 60 to 70 minutes.
- Test in center.
- Loosely cover with foil if cake starts to become too brown.
- Remove from oven; let cool on wire rack 10 minutes in pan.
- Carefully invert cake onto cake plate.
- Brush with the 1/4 cup liqueur.
- Let cool.
- Glaze with either of the glazes or dust with powdered sugar.
- Glaze:Combine all ingredients until well blended.
- When the cake is lukewarm, spoon over top.
- Let cake cool completely.
